I have been canning pickle all morning. What I have left are some HUGE Cukes that are way too seedy for pickles.

Besides feeding them to the chickens and reading a book the rest of the afternoon.......any ideas on what I could make with them?

I would really like to get them perserved somehow into something my family will eat.

Well, the chickens are going to win this one. My mother called as I was posting to let me know they have MORE produce for us. My parents plans a huge garden then share with everyone. So we will be going over in the morning to get our portion, which will keep me canning for the next week.

So, I rested this afternoon....got my teeth cleaned, did the walmart shopping, revamped the budget, did dishes, made pizza for lunch, etc.

But I am going to look at the Fiesta Salsa recipe. We love salsa here.

Can Fiesta Salsa (on the farm kitchen forum)
Can Sweet Pickle Relish
Puree it and freeze it for soups or facial masks
Make a cucumber spread for chicken wraps
Make braised cucumbers
Add them to dips or make dips
