Posted - Aug 31 2012 : 06:44:46 AM I have been canning pickle all morning. What I have left are some HUGE Cukes that are way too seedy for pickles.
Besides feeding them to the chickens and reading a book the rest of the afternoon.......any ideas on what I could make with them?
I would really like to get them perserved somehow into something my family will eat.

Posted - Aug 31 2012 : 4:25:13 PM Well, the chickens are going to win this one. My mother called as I was posting to let me know they have MORE produce for us. My parents plans a huge garden then share with everyone. So we will be going over in the morning to get our portion, which will keep me canning for the next week.
So, I rested this afternoon....got my teeth cleaned, did the walmart shopping, revamped the budget, did dishes, made pizza for lunch, etc.
But I am going to look at the Fiesta Salsa recipe. We love salsa here.
