Ok, i'm all excited...another topic was started about turkey soup, so i thought I'd share what I've canned and I'd love to see what you all have been canning as well. I love admiring all the jars while they cool on the counter. I feel so proud of myself

I've been building up my pantry for emergencies. I've been canning stock and soups and I've started with meat. I like the pint jars because they are great for 1 person, so if the lights are out in a storm, no waste and no worry about saving leftovers. Here's what I've been canning...

I canned some cranberry salad yesterday. It turned out a lot like preserves, so I am planning to bake some brie and scoop some over the top as an appetizer for Thanksgiving. I am trying to get away from so much white sugar in our diet, so I converted the recipe to honey. It tastes a bit more tart, but I do like it that way a lot better.

Ingredients:
3.5 C fresh cranberries
1 large can (20 oz) crushed or bit pineapple, drained (reserve the liquid)
1 small can (11 oz) mandarin oranges
1/4 C lemon juice
2 C honey
1.5 C cranberry juice
1/3 C ChillOver powder & 1/3 C honey & 1/3 C pineapple or cranberry juice
1 C chopped walnuts or pecans (optional)

Cook cranberries with 1/2 C honey and 1/2 C cranberry juice in a saucepan until boiling. add pineapple, oranges, lemon juice, remainder of cranberry juice, and remainder of honey. Cook until mixtures comes back to a boil, about 15 minutes. In a separate bowl (I used a microwave safe measuring cup), mix the honey and pineapple juice. Heat the honey and juice mixture enough for the ChillOver powder to dissolve, stirring to prevent lumps. once the fruit in the pot comes to a boil, add the ChillOver powder mixture and continue to cook until the mixtures thickens slightly. Remove the fruit from the heat and stir in the nuts if you are adding them.

If you plan to can any of the fruit mixture, follow the directions for water bath canning. Ladle the hot fruit mixture into hot jars, leaving 1/2" headspace. Wipe down the rim of each jar, center the lid on the jar and tighten the band to fingertip tight. Process in boiling water 15 minutes. Remove immediately and set on a towel to cool overnight. You should hear the telltals "ping" of each jar as it seals. In the morning check each jar by pressing in the center of the lid. If it makes a popping sound, it didn't seal. Put it in the refrigerator and enjoy right away.

Always remember to remove the rings from your canned goods for storage as leaving them on will allow them to rust and make them difficult to get off later.

someone gave my husband several large pumpkins for free, so yesterday i canned 14 quarts I've come to the conclusion that I need a 2nd canner too. It feels great to be building up the pantry, like an insurance policy.

I'm also drying rose hips, parsley and potatoes as well.

I canned some Chai Tea Concentrate and Pizza Sauce today and froze some less desirable Kale leaves to use next time I make dog food :)

Well, I thought I froze the last of the Broccoli, working on that today. We really didn't have that as much as I was hoping for.

Ally, I hope you like the recipe :) I was getting a bit burnt out on Apple Butter, Apple Sauce, Apple Pie Filling, etc. too :) Let me know how it goes :)

Yesterday I made Spiced Blueberry Jam and froze the last of the Kale and Broccoli, yay!
I also froze some bell peppers that we got on sale very cheap :)

Sharon I am going to try that BBQ sauce today! We still have soooooooooo many apples left and I'm really burnt out on applesauce and apple butter and apple pie filling!!! Did apple jelly yesterday,and it came out OK.

Sharon, I am playing around with some cranberry juice to make cranberry sauce with stevia. (can't do the sugar, diabetic here) I got some chillover powder to try it with.

today im canning turkey stock. we went to our local farm stand week thinking we would buy apples for making applesauce..pie filling etc. they wanted 30.00 a half bushel! considering the amount of apples we would of needed...it would of been the most expensive applesauce and pie filling ever made. ive been discouraged about that as I was really looking forward to doing that.

Sweet Potato Butter
adapted from Putting Up

4 c sweet potatoes, cooked, peeled, and mashed (3 lbs sweet potatoes)
3/4 c apple juice
1 c light brown sugar
1 c sugar
1/2 c orange juice
1/2 c lemon juice
1/4 c cider vinegar
2 tsp. cinnamon
1 tsp. vanilla
1 tsp. salt

Cook the potatoes in the oven or microwave until soft, peel them and puree them in a food processor with the apple juice until smooth. Place in a pot with remaining ingredients and bring to a low boil for 10 minutes. Process in a hot water bath for 20 minutes. (see Canning Basics) Makes 3 pints.

Sweet potato butter is great on sandwiches, (I like to add it to a peanut butter banana sandwich) and delicious slathered on grilled meats. It can also be used as a pie filling as I mentioned above. Here's how to do it: Add 1 beaten egg to a pint jar's worth of sweet potato butter and fold in thoroughly. Pour into a half baked pie crust and bake at 350 degrees for 20-30 minutes.

Oh Sherone, I wish that I had grown some beets this year, I love pickled beets. You are one busy girl!
