I'm looking for recipes that use few ingredients, are quick to prepare, and don't require a lot of exotic or expensive ingredients.

One of our favorite, simple recipes is baked ravioli.

Take frozen ravioli and layer them on the bottom of a greased 9x14 baking dish. Over the top add tomato sauce with whatever seasoning you prefer. (or spaghetti sauce) Add a layer of shredded cheese of your choice. Repeat with at least one more layer of each. Top with more cheese. Cover and bake at 350 for about 1/2 hour.

My new simple dinner...

Pan fry diced potatoes, onions and kielbasa or smoked sausage in your CI pan with olive oil or bacon grease until crispy.
Add a handful of fresh spinach to the pan and continue cooking till slightly wilted.
Add a handful of shredded cheddar cheese to the top of the mixture and bake in 350 oven long enough to melt the cheese.

YUMMMMYYYYY!!!!

Our family favorite is Meatless Meatloaf, mushroom gravy, mash potatoes & peas and onions.

Meatless Meatloaf
1/2 stick of butter, melted
1 envelope of lipton onion soup mix
6 eggs
16 oz Cottage Cheese
1/2 box (large) Corn Flake cereal

Mix together well, put into a greased glass loaf pan and back 60-70 minutes at 350 degrees.

Italian Chicken
In crock pot, place:

4-6 chicken breast (boneless, skinless)
bag of baby carrots
4-6 red potatoes, quartered
sliced onion
Bottle of Italian Dressing

Cook High 4 hors or Low 6 hours or more, depending on crock pot.

My go to recipe for a simple meal is BBG chicken chibatta sandwiches. It is embarassingly simple. I put frozen chicken breasts in the bottom of the crock pot to cover the bottom. Then I add two bottles of BBQ sauce and a little water, not much. I set the pot on low then go about my business for the day. The hardest part is going to the store to get fresh chibatta buns. It is a hit and miss because fresh is best but not always available. Once the chicken is cooked I cut into small pieces then put on the chibatta bun and close with the top. Yum Yum. I think I will make some this weekend. We usually serve it with oven baked fries and a veggie.

Shoot for the moon. Even if you miss you'll still be amoung the stars!

My favorite is teriyaki chicken!

4 to 6 chicken breasts
1 cup soy sauce
1 cup sugar
1/2 chopped onion
1tsp garlic salt

Put all in crock pot on low 7-8 hours or high 3-4 hours.
I serve over rice and love using the leftover juice!

This is an easy recipe and comes in handy when dinner has become an afterthought on a busy day. Two ingredients: hot dogs and shredded cabbage.
Stir fry shredded white cabbage in a bit of olive oil and add in some sliced hot dogs (well some folks would even use Spam). It is filling, and has texture of crunch and some saltiness from the hot dogs. Dip in your favorite mustard. Quick, simple and tasty. I do Salsa Chicken when I can't think of anything else. I plunk 4 boneless skinless chicken breasts in the crockpot and dump a large bottle of chunky salsa over top. If I happen to have some carrots or peppers or canned corn, I will throw that in, too. Let it cook on low all day. I like to serve it with sour cream, guacamole, shredded cheese and tortilla chips.

If you're in a rush, you can actually do it on the stove-top, but it won't be quite as fall-apart tender cooked more quickly.

I will also use cooked, shredded chicken from the freezer to quickly jump start chicken salad - making wraps or sandwiches for dinner.

One of our favorites is to add dried cranberries and chopped pecans to the basic chicken salad. I typically use a mix of mayo and a dab of Miracle Whip, a bit of mustard, finely diced celery, salt, pepper, and onion powder for my basic recipe.

Comes together very quickly as I have all these things on hand all the time - just need bread or wraps and then we might have fresh fruit or applesauce (home canned) to go with.

Roasted Asparagus with Browned Butter

1 bunch asparagus spears, tough ends broken off
Salt and Pepper
Cooking Spray of your choice

2 T Butter
2 tsp Soy
1 tsp Balsamic Vinegar

Spray cookie sheet lightly, lay down asparagus in one single layer, touching is fine. Spray lightly with cooking spray, sprinkle with salt and pepper.

Roast at 400 for 12 minutes.

Make browned butter sauce during last 5 minutes or so that asparagus are in oven. Melt butter over medium heat in small frying pan. Don't stir, just shake it a bit, until butter browns. Remove from heat. Pour in soy and balsamic vinegar, stir well. It will SIZZLE :)

Pour browned butter over asparagus when it comes out of the oven and serve.

My search for the same is on going! Mostly I've found that super quick meals either mean I've got it in the freezer or part of the meal in the freezer.

BUT, there are some exceptions. Sadly, most rely at least partly on some processed ingredients.

Turkey and Stuffing

3 cups chopped cooked turkey (leftovers are good or pre-cooked, chopped and frozen - chicken works well too - Rotisserie chicken meat is best flavor I think)
1 bag (22 oz) Green Giant Select™ frozen broccoli florets, thawed and drained
1 can (10.75 oz) cream of chicken soup (I often sub cream of mushroom)
1/2 cup sour cream
1 1/2 cups shredded Swiss cheese (6 oz)
1 package (6 oz) Betty Crocker™ Homestyle Stuffing turkey flavor
3/4 cup hot water

Heat oven to 350°F. Spread turkey in ungreased 13x9-inch glass baking dish. Top with broccoli. In medium bowl, stir together soup, sour cream and cheese; spread over broccoli. In large bowl, stir together stuffing mix and hot water; sprinkle over casserole.
Bake uncovered 35 to 40 minutes or until hot and bubbly.

Avocado Cucumber Salad

1 avocado
1 cucumber
¼ head of lettuce
Feta cheese
Black beans (optional)
Bell pepper, any color, finely chopped (optional)
Red onion, finely diced (optional)


Dressing
½ Tb of olive oil
1 Tsp balsamic vinegar
garlic powder – to taste
Salt and pepper – to taste

Mix up dressing, toss with all other ingredients lightly.

Collard greens sautéed with butter and some spices (I use cinnamon, cloves, and cumin). My hubby requests these all the time and he doesn't usually like greens.

Can of ferried beans (optional--sometimes if I have it in the house)
Pack of taco season

Cook until hot.

Cheesy green beans
2 cans of green beans heated to boiling. Drain liquid, add around 1/3 to 1/2 c. velvetta cheese chunks, and a 1/8 c milk. Gently stir till cheese melts and serve. The cheese and milk varies to everyones taste. Our whole family loves these.

Peanut Butter Cookies
1 c sugar
1egg
1 c peanut butter
Mix all, roll in ball size of large walnut, roll in extra sugar in a bowl, place on cookie sheet, make cross with fork and bake 10 to 15 minutes at 350. Watch so they do not burn. Do not use a dark cookie sheet.

Handed down to me from my late Mother is an easy recipe called 'Chicken Simple'----that was her name for it.
Lay chicken thighs in a 9x9 pan
season any way you want--S&P
Cover with I can cream of mushroom or cream of chicken or for that matter any cream style soup mixed up with about 1 cup or so sour cream
sorry to say we never measured exactly--sorry
OR
1 jar of creamy Alfredo sauce
SO:
I pkg chicken thighs (about 5 thighs)
I can sm carton sour cream
mix sauces
pour over chicken placed in 9x9 pan
Bake at 400 for 1 hr
Season with S&P
Eat

You can enlarge or make the recipe smaller. Really easy
Oh put it in the oven at 400degrees for about one hour.

My favorite thing is to roast vegetables. Irish & sweet potatoes, carrots, onions, parsnips, mushrooms, winter/summer squash, garlic, leeks, eggplant - any combination of whatever vegetable I have on hand.

Add olive oil, salt/pepper, herbs of choice to zip lock bag - add vegetables to coat and spread out on oiled cooking sheet or foil pan. Roast at 425 degrees until tender.

Great as a side dish, added to soups, potpies, bake-overs, pastas, & casseroles.

I cook up a pan of roasted vegetables once a week and have the start for easy to make dishes for days.
