Ok,,, I am gonna post her and , 'across the fence'..
I actually got to test out the skillet corn bread recipe...
and it turned out Great!
until I get my kitchen counters in,, I am limited.. but this is such an easy peasy recipe...
gathering some of the ingredients... I used non fat milk in place of the buttermilk and sweet unsalted butter...(I like sweet corn bread)
into the oven it goes...
Done and Yum!
I can hardly wait to try some of the other recipes...

I made that same cornbread recipe several times from MaryJane's cookbook and it is the best recipe I have ever had. The cornbread comes out moist and light which is just plain yummy with melting butter and apple butter on top! YUM!!

I'm going to have to get this cookbook! It looks fantastic!!! We mainly use cast iron when we go camping but I have ceramic coated pieces I use in the kitchen too. AND I was so excited when DH brought home a new cast iron pan with a cool "high" cast iron top to it. He called it a chicken fryer - I call it FUN! |

Yum!! I made sourdough pancakes in my skillet the other day - you just pour the whole batter in the pan, cook fr 5 minutes, top it off in the broiler (to cook the top) for another 2 minutes, and put on the plate. So quick and easy - and delicious! I love cast iron cooking :)
