I'm looking for some topping ideas - mainly savory - that use only whole grains. Is it possible not to use flours? I can blend whole grains a little if necessary. But I'm not a grain or bread person so I'm not sure what to use.

I have some digestive issues and I can eat wheat and rice and such but they tend to bind me up too much so I stick with brown rice or grits/polenta for my grains and then not much of them.

But I love bakeovers for their simplicity and wonder if anyone has already come up with a whole grain/bean/or something topping.

How about hash brown potatoes? Store bought or grate yourself. Maybe an egg to bind. Season to taste. The next time I do a bake over I may give it a try.

Thanks Ashley, maybe I can figure out how to cut that recipe into about 1/4 to fit a bakeover. Looks promising anyway. But I agree, if I had a recipe for a cornbread-type topping that doesn't have binding flours, that would be awesome!

My first thought is polenta. It would trap in heat so the veggies cook, but it doesn't have the yummy bread texture that makes BakeOvers so good. I did a little searching for a flourless bean bread, and thought this recipe showed promise: https://eatsmartmeals.com/2013/04/23/grainless-bread/

I do eat oats. I'm just trying to stay away from a colon-binding flour such as rice or wheat and wondered if anyone had any actual recipes for a topping. I have no idea how to create a decent one and living on very limited means, I don't have a lot of food to waste trying things out. I'm not sure how to make a cornmeal/polenta base without flour. That's why I was asking around. :-)

Do you eat oats? What about brown rice flour? You may be able to make a large polenta cake as the topping... Or you could try a keto based "bread" recipe...
