Sour Cream Scalloped Potatoes

1 bag (32 ounces) frozen hash brown potato cubes
2 c. sour cream
1 can (10 3/4 ounces) condensed cream of chicken soup, undiluted
2 c. shredded cheddar cheese
1/2 c. butter, melted
1/4 t. onion powder
1 t. salt
1/2 t. pepper
1 package french fried onions

In a large bowl, combine sour cream, soup, butter, and seasonings. Mix well. Add cheese and hash browns, mixing thoroughly. Pour into an ungreased 9x13 baking dish. Bake, uncovered, at 350 degrees for 1 hour. Sprinkle with onions, return to oven for 10 minutes.


This is my go to potluck contribution. I hate wasting food and you know the leftovers are no good after they sit out all evening...I decided to fix that by bringing a dish that very rarely ever doesn't disappear! Haha!

Oh! That’s fortunate for you, Darlene. I did not discover this until much later in life. And you know, too, Darlene, this is one dish I can slip into any gathering where I know people don’t really eat “healthy” foods, and it’s always a winner. I never “preach” to anyone about the food, I just bring this and let people experience a different way of eating. Many people have asked me for this recipe in that way. A satisfying recipe on 2 levels.

This is a great swap, thanks Darlene! Many good recipes, ladies!

Here’s my offering. I love this Carrot Salad recipe: (sorry I do not have exact amounts, I am going from memory, plus I always do it to visual balance and taste, anyways).

7 medium carrots, shredded or pulsed in blender or food processor
2-3 garlic cloves
1 Tbsp olive oil
1 tsp honey
raisins
lemon juice
salt
parsley

Enjoy!

Sounds good Marlene!

Heather, sometimes I mix half cauliflower and half broccoli. I put olive oil and diced garlic in a pan and fry until lightly browned. Add cauliflower and broccoli and sauté until done. Season as desired.
Also, I use just butter sometimes!

3 to 4 gala apples peeled, cored sliced,1 cup cranberries, 3/4 c brown sugar, 1/2 c uncooked oatmeal, 1 t cinnamon, 1/3 softened butter. Combine fruit in crockpot mix together remaining ingredients. Sprinkle over fruit. Cook high 2 hours. Serves 6 to 8 name is apple/cranberry crisp.

Farmgirl friends are fun.

I love mashed cauliflower and it's so easy!!

1 bag frozen cauliflower
1/2 package cream cheese

Boil the cauliflower until tender. Drain very well. Beat in cream cheese and enjoy!

I bet you could use fresh cauliflower and probably sour cream instead of cream cheese if you wanted.

This is what's in my Crockpot today.

SCALLION (green onions) Spaghetti Sauce
Simple and delicious if you like garlic and onions!

4 - 28oz cans of crushed tomatoes - put in crockpot on high.
6 bunches of scallions
6 - 10 cloves of garlic sliced depends on how much you like garlic! LoL! } place in sauté with scallions and enough olive oil to cover bottom of pan.
Sauté on low heat until soft. Do not brown. Stir often 10 - 15 minutes. Season with salt, pepper and crushed red pepper if desired.
Add to sauce and turn on low and cook 4 - 6 hours. If the sauce is to thick add enough water to make it thinner.
Serve with any macaroni you choose.
Sprinkle with your choice of grating cheese. I use pecorino Romano.
This is a meatless meal for us. Sometimes I will make meatballs, which I fry and don't put in the sauce. We eat a salad and the meatballs after the spaghetti.
Left over sauce can be frozen for another meal!

This is my go to for picnics and get togethers! I got it 40 years ago when my son was in scouts!

STRAWBERRY SHORTCAKE
Use a 9x13 pan.

1 prepared pound cake or angel food cake. 10-13oz. Break/cut in bite size pieces and spread in pan.
Strawberries (fresh or frozen) enough to scatter evenly throughout cake.
1 large strawberry jello.
1 c boiling water to dissolve jello.
1 c cold water added to jello and b water. Pour over cake pushing cake and strawberries down into jello water. Refrigerate until set.
Topping
1 small instant vanilla pudding
2 c milk mix until thickened
1 8oz cool whip - add to pudding and blend. Top cake.
Garnish with extra strawberries if desired.
I always have the ingredients on hand. I freeze pound cakes which cut up nicely. Add blueberries also.

Mom's Mandarin Orange cake

She used to bake this in a bundt pan. Everyone loved it.

! pkg of yellow cake mix
1/2 cup oil
4 eggs
1- 11 oz. can of mandarin oranges
Mix together, pour into 3 layer pans or bundt pan. Bake 25 minutes at 350 degrees using toothpick to check for doneness.
Cool on wire rack.
In small bowl mix 12 oz. of cool whip and 1 can crushed pineapple, drained.
Mix well and spread between layer and on top and sides or over bundt cake and garnish with mandarin oranges. Must be kept refrigerated.
This is my last minute go to for company.

Candy Squash
(This recipe is God's Recipe)
When your squash are so very productive, you are overwhelmed...make this!

First turn the crock pot on to HIGH...and spray the cooking surfaces with cooking/baking spray.
Next put one stick of butter in the crock pot to melt.
Chunk up enough tender yellow squash to fill a big crockpot.(mind is oblong)
When most of the butter has melted begin to 'fill 'er up' with squash.
Stir and flip the chunks around to distribute the butter.
Next put the lid on your crock pot and, walk away!

((Notice...NOTICE...there is Nothing in your crock pot but squash and butter! Not a drop of a sprinkle of water or salt or anything else...))
after an hour and a half, open the crock pot to stir and observe and be sure to take a whif of that beautiful smell. Put the lid back on.
After 2 hours, remove the lid, stir it again! Now take your old fashioned potato masher and break up any bigger pieces that may remain. Take a package of Kraft American cheese slices, and cover the surface of the squash, about 6 -8 slices. Using the potato masher gently push the cheese under the surface. Put the lid back on and wait...five minutes??? Then remove the lid and stir the candy squash until the cheese is all mixed in.( Now this is the part that I must do in secret...because my hubby can not wrap his "guy" brain around the idea of cheese in the squash.) I use it as a thickener.
Your squash is ready to serve and enjoy. Of course I always taste it first, second and third. For the first hour after it is ready I probably sample a cup of more...It is so good. (No more burned squash, no more fighting to get the water And flame adjusted!)
And I always thank God for this recipe!

Frozen Fruit Salad from the book World of Pies.
3 oz. Soft lite cream cheese
1/3 c. Lite mayo
1 top. Lemon juice
1/3 c. Sugar
1 c. Whipping cream
2/3 c. Mini marshmallows
1/4 c. Mandarin orange slices, drained
1 lb. Can fruit cocktail with cherries, drained
2 tbsp. Chopped pecans

Blend cheese mayo, and lemon juice. Beat cream, add sugar 1 tablespoon at a time till stiff. Fold into cheese. Add rest of ingredients. Pour into an 8x8 pan and cover with plastic, then foil. Freeze. To serve, thaw slightly and cut in squares.

This is my mother-in-law's yellow squash recipe.
3 yellow squash (can also be zucchini)
1 onion
1/2 stick butter
2 fresh ripe tomatoes (or canned)
Oregano
Salt and pepper

Slice squash into 1/4" rounds and chop onion. Put everything into a frying pan on high till onions are softened then simmer till squash is cooked through. It tastes better the next day but usually doesn't last that long. Very flexible recipe.

I have a simple coleslaw recipe:

COLESLAW

Ingredients
1 (14 oz.) pkg. coleslaw mix
1/2 cup good quality mayonnaise
1 1/2 Tbsp honey (or granulated sugar)
1 1/2 Tbsp apple cider vinegar
Salt (optional, to taste)

Instructions
In a small mixing bowl whisk together mayonnaise honey, apple cider vinegar and a pinch or two of salt if needed.

Place coleslaw mixture in a medium mixing bowl pour mayonnaise mixture over then toss to evenly coat. Serve immediately.

I found this recipe on line last year when I was looking for some ideas for peaches. This is from "Gimme Delicious". I bought some small purple plums at the farmers market, the kind some call prune-plums. This surely was delicious!

Peach and Plum Up-Side Down Cake
Ingredients
4 eggs
1 cup sifted cake flour
1 cup white sugar
1/2 cup orange juice or syrup from canned fruit
1 teaspoon baking powder
1/4 teaspoon salt
1 Tablespoon butter, melted
1 teaspoon vanilla
Topping:
1/2 cup butter
1 cup packed light brown sugar
1 cup sliced peaches
1 cup sliced plums

Instructions:
To make the topping:
Preheat oven to 350 degrees. Melt 1/2 cup butter and pour into a 10 inch heavy skillet or springform pan. Sprinkle 1 cup brown sugar evenly over pan. Arrange peach and plum slices evenly on top; set aside.
To make the Cake batter:
Sift together flour, baking powder, salt. Separate the eggs into two bowls. In a large bowl, beat egg whites just until soft peaks form. Add granulated sugar gradually, beating well after each addition. Beat until stiff peaks form. In a small bowl, beat the egg yolks on high speed until very thick and yellow. With a wire whisk or rubber scraper, using an over-and-under motion, gently fold egg yolks and flour mixture into whites until blended. Fold in 1 tablespoon melted butter, juice and vanilla extract. Spread batter evenly over fruit.
Bake for 30-35 minutes or until surface springs back when gently pressed with fingertip. Loosen the edges of the cake with table knife. Cool cake for 5 minutes before inverting onto serving plate. If you used canned fruit, pour the leftover syrup onto cake. Serve warm or cold. Store in fridge.

Fruit Cocktail Cake

1 1/2 c sugar. }
1/2 c brown sugar. } cream
2 eggs. }
1 15oz can fruit cocktail with juice } add and mix
2 c flour. }
1/2 tsp salt. } add and mix well
2 tsp b soda }
Grease and flour a 9x13. Bake 350 for 40-50 min.

Icing
1 stick butter
1 c evaporated milk
3/4 cup confectioners sugar. } Micro until incorporated. Spread on cake right out of oven. Very moist cake!
1 c coconut
3/4 c chopped nuts

Freezer Pickles

16 c thinly sliced cucumbers
2 thinly sliced onions
8 Tbs kosher salt
Mix well and refrigerate 24 hrs. Use a non metal container. Pack in freezable containers leaving 1/2" headspace.

Brine
6-8 c sugar ( depends how sweet you want them )
4 c white vinegar
5 Tbs pickling spices
Bring to a boil until sugar dissolves. Pour over pickles leaving 1/2" headspace. Put lid on and let cool. Freeze for up to 6 months.
Very good!
