Well... today, I channeled my inner German Girl...
I decided to make a pork loin goulash,,,

with Knodels..
I had bought of box of Knodel mix last week...

So upon reading the box info, I realized it only made 6 potato dumplings.. so I decided to make spatzle as well...

Needles to say,, hubby and I a stuffed little piggies and there are enough left overs for lunch tomorrow.

and the best part,, the bell peppers and onions in the goulash were fresh picked from my garden..
Yum...

for those of you who are not familiar with spatzle,, it is fresh German pasta, and Knodel is grated potato dumplings.

ok, so here is a simple recipe for spatzel..
I measure by weight.(225grams) of flour,, or you can put flour into a 2c measuring cup and fill it up to the 12oz. line...

fill a measuring cup up to the line that says 12oz. (225grams)
3/4 tsp salt
3 eggs
90ml of water...
I mix the eggs and water together and then pour into the flour/salt mixture..
I use a plastic mixing spoon,, work the batter/dough till it is sticky... then I let it rest for 10min +/-
I bring a pot of salted water to boil... then using my press I squeeze the mixture into the boiling water.. using a wet knife, I cut the extruding mixture... the noodles cook up quit fast,, when they float to the surface, they are ready, and I us a strainer to scoop them out and shake off excess water and put into a holding bowl,, then I continue till all mixture is used up,
Oh, and I cover the holding bowel with a clean dish towel to keep them warm.
Really quit simple.. you can drizzle gravy or a cheese sauce over the spatzel,, yummy!

OK,, today I needed a German Soul food fix...

today was spatzle and schnitzel... YUM!
I didn't pound down the pork very thin.. but hubby likes it a bit thicker so he was happy.
I know there is no 'veggi' on my plate... but I was in my garden harvesting a ton of tomatoes,, and I ate about 1/2 of them! so.. I think I am good! lol!

Krista,, can do.. and yes,, very yummy... :>)

My version of Goulash is a simple brown gravy, with onions, bell peppers and mushrooms in it.. I also use salt, pepper, garlic and onion powder, paprika and apple cider vinegar.. or red wine if I have an open bottle on hand :>)
my problem is,, like my mother,, I season and cook by taste.. I rarely use measurements so it's hard for me to share recipes..

my 3 spatzle makers...
I brought each one back on different trips back to Germany over the years.. the squeeze bottle one I brought back just a couple of years ago..

This is my 'workhorse'...for when I make large batches. The white one has 3 different sized extruding holes...

this bottle is for when I make quickie single servings.... you can see the lettering is starting to wear off..
I use to have the 'mandolin' style but gave it to my daughter.

We actually use 2 different types of spatzle makers... the 'rice presser' type and the other is a simple Mandolin where you cut and scrape the dough off into boiling water. My Swiss/German sun-in-law's family use the Msndolin method.. my German family does the press.
but either way, the results are yummy!

Grace I have seen the spetzle makers in a lehmans catalog. Sounds simple enough for sure. A small dumpling.

Lisa,,, our German Deli sells (almost) authentic Pretzles.. I just salt, heat and eat.. personally I like to slather 'Nutella' on mine! unless I can get my hands on some (not German) nacho cheese sauce... lol!

Oh Michele,, spatzle is easy to make,, pour a small mountain of flour on your wooden cutting board, add a pinch of salt,, then make a hole in the mountain and crack in 3-4 eggs,, add a bit of water and by hand mix and knead.. then you can use a knife and cut/scrape the sticky dough/batter into boiling water or use a hand press, like a 'Ricer' for potatoes'.. soon as the noodles float to the top about a minute or two,,, using a Hens Nest hand strainer, scoop up the noodles, drain and set aside.. now make more...

OK,, under stand,, my mother tried to explain this to me in her very broken German/English.. I had to watch her to get the idea....and what the dough/batter looks like...
One of these days I will try to figure out the true measurements... lol!

Oh Grace, we are in mourning here because our super dooper authentic Oktoberfest was cancelled. Honestly, I think that is my husbands favorite day of the year, so much so that he listens to German music (religiously) on Sundays on a local station. He has been SO BUMMED. Wish we could pull up a chair!
Got any sauerkraut balls?

Oh I love all German Food and miss it. I can make a great schnitzel though, we sure miss Germany #127465;#127466;
We have a great German restaurant in town that they say is very authentic German food. Can not wait to try it.

Oh yum! My Hungarian mother made spatzle and goulash. I gave my spatzle maker to my daughter when I had to go ow carb. I miss it..
