Here is a great zuchini bread recipe. I like it because the chocolate chips and the bit of spice make it really tasty. It is also dairy free, and it is a good way to use up the garden zuchini.
3 cups flour 1 tsp salt 3/4 tsp baking powder 1 cup chocolate chips 1 cup nuts 2 cups shredded unpeeled zuchini 1 cup vegetable oil 1 and 1/2 cup sugar
Combine first nine ingredients. In a seperate bowl, beat eggs with oil. Combine with dry mixture until moistened. Pour into greased 9” loaf pan, and bake for an hour and a half at 350.
