What do you do with banana peppers? My father in law decided we needed some in the garden. I've only ever grown green peppers which I eat fresh and freeze some for later. I've never grown banana peppers and have no idea how to preserve what he doesn't eat. And there will be plenty LOL! Instead of getting one plant he got 4!

Banana peppers are so good. You can add them to salads, or throw some in stews. We use them on crackers and cheese for a snack.

Besides making some kraut a couple years ago I've never fermented. Might have to give it a try. Thanks for the idea, Lisa.

Thanks Lisa. I ordered the lids and plastic rings. I like the idea of plastic rings because like you said the metal ones do rust. Through the years I have learned to buy the best I can afford because in the long run it works out to cost me less and nine times out of ten does a better job.

These are the Masontop brand, which is what Doug & Stacy recommended. THere may be cheaper options, but this is what I have had for several years.

Lisa, your jars of fermented goodness are beautiful. I need to get back to fermenting. Had a couple of bad batches awhile back and but all my fermenting gear back in the cabinet. Where did you get your fermenting lids? Maybe I need a new toy to get me back on track.

I would ferment them. But, I ferment anything that isn't nailed down, LOL.
Left to right: Pickles, giardiniera, snow peas (my new FAVORITE), and purple cauliflower with jalapeno.
If I had them, I would add banana peppers to the line up.

Cut them up and freeze them. I canned some last year. Make a brine, slice and put in jars, and water bath. I don't remember if i got the recipe off the internet or kind of followed one in the ball canning book. But it is simple to do.

Heather the only time I pickled banana peppers was in an "end of the garden mix". Besides the banana peppers I used carrots, onions, and zucchini squash. I used a bread & butter pickle brine. I did not have a recipe for the mix, but I did use the bread & butter pickle brine from Ball Blue Book. Canned in hot water bath and used the time from other pickle recipes.

Very much agree with the others! I put them on my ham sandwiches. Sometimes even eat them by themselves. I really like them.

Dawn is so right - pickle them. I buy pickled banana peppers for sandwiches; sometimes they end up in homemade chili or a stew.
