I just discovered that the National Garden Bureau has named 2023 the Year of the Broccoli. Each year the NGB selects a crop for North America that is easy to grow with a great genetic diversity.
Did you know?
* the optimal storage life of freshly harvested broccoli is 21-28 days;
* Broccoli has more protein than most other green vegetables;
* The US ranks 3rd in the world for top broccoli export;

Here's one of my favourite broccoli recipes that I thought I would share with you. Does anyone else have a favourite broccoli recipe?

Broccoli-Bacon Salad
1 clove garlic, minced
1/4 cup mayonnaise
1/4 cup sour cream
2 tsp cider vinegar
1 tsp sugar
1 x 8oz can sliced water chestnuts, chopped
3 slices cooked bacon, crumbled
3 tbsp dried cranberries
4 cups finely chopped broccoli crowns
pepper to taste

Whisk garlic, mayonnaise, sour cream, vinegar and sugar in a large bowl. Add broccoli, cranberries, water chestnuts, bacon and pepper. Stir to coat with dressing.

Yesterday on Lidia's PBS Create cooking show she made roasted porkchops with broccoli and chickpeas. This season's shows are shot out in her garden so the food was cooked in a large toaster oven. It's neat to watch her cook on a hot plate and in that oven.

Forgive me I got a little off subject. The porkchops were salt & peppered before brushed with olive oil then roasted in a 400 oven till halfway done. Then she added the vegetables around the porkchops to finish cooking. She used commercially canned chickpeas. She seasoned the vegetables with those little pale green Italian peppers you see in jars in the stores. She left the peppers whole and poured some of the brine over the vegetables. Lidia doesn't give measurements unless she is baking so you will have to add seasoning to taste.

Yum, Cindy!! That sounds wonderful! My favorite recipe using broccoli is broccoli rice casserole. I’ll dig out the recipe and share…it’s definitely NOT healthy! :)

I love broccoli and we eat it a lot. It's my oldest favorite veggie. I tried growing some 2 years ago and our weather got way too warm so fast that they all bolted. Since it's so picky in my climate I decided not to grow it again. Our favorite broccoli recipe is to steam the broccoli and top it with some Panko bread crumbs that are cooked in butter in a pan. I then add some garlic to the pan for the last minute of cooking and top with some lemon zest. Its so yummy.

I don't have a broccoli recipe but my two favorite ways of cooking it is steaming or roasting both with Creole seasoning.

Mmmmm, MMM! I think my 'year of the broccoli ' began in 1984!! I love broccoli Cindy! What a great yummy salad recipe which I'll happily try! I can't grow it outside but I DO LOVE growing broccoli micro- greens for my salads!! I also cook it into my scrambled eggs, wrap it in a thin slice of chicken and put organic healthy cream of mushroom soup and bake, and various other ways but the greens are my fav! I'll celebrate broccoli with ya! Thanks for posting!!
