I love to see what other people are eating for dinner. I sometimes get in a rut and hearing what other people eat helps me to get new ideas. So I thought I would share my menu this week with you!
Sunday - Meatloaf/baked potatoes/Roasted Brussels Sprouts and Carrots
Monday - Bourbon Mustard Pork Chops with Sweet Potato Hash
Tuesday - Pizza Takeout - We will be at a HS Chess Tournament until 8 PM! We get to feed 27 High School Kids this night!
Wednesday - Paprika Chicken and Egg Noodles
Thursday - Sandwich Night
Friday - Beef Fajitas, Brown Beans and Rice
Saturday - Breakfast Burritos using leftover beans, rice and fajitas. Dinner - Cheese Steak Sandwiches with leftover beef and sauted onions and peppers.

Julie, I love the fancy sounding names, like burbon mustard pork chops. Yummy. Here is my plan for the week: Sunday-Hamburgers at Grandson's St Pat's party, I am taking salsa and jalapeno/cream cheese dip Monday-smoked sausage and sour kraut with fired potatoes and green salad Tuesday- Cashew Chicken w/broc and rice Wednesday-Liver and onions with mashed potatoes and okra Thursday-Sloppy Joes and potato cakes made with last nights mashed potatoes Friday-Allspice meatball soup. Meat balls already in the freezer Saturday-Ham and pinto beans, cornbread and cole slaw. Will use left over pinto for Tex/Mex refried beans next week |

The funny thing is the Burbon Mustard Pork Chops are SO easy to make!
I would love to know how you prepare cashew chicken! My hubby might like that.

Julie, This recipe is from one of the Reiman publications, don't know which one or how long ago. Anyway here goes. Cashew Chicken Stir Fry 2 cups Chicken broth, divided 1/4 cup cornstarch 3 T soy sauce 1/2 t ginger 1 pound boneless skinless chicken breast cut into 1/2 inch pieces 2 garlic cloves, minced 1/2 cup thinly sliced carrots 1/2 cupsliced celery 3 cups broccoli florets 1 cup snow peas. I freeze snow peas from the garden. If I don't have any, I use green peas. 1-1/2 cups cashews Brown rice. Ole Ron prefers chow mein noodles
In a skillet, heat 3 T of the broth. Meanwhile, combine the cornstarch, soy sauce, ginger and remaining broth until smooth, set aside. Add chicken to the skillet. Stir-fry over medium heat until no longer pink, about 3-5 min. Remove and keep warm. Add garlic, carrots and celery. Stir-fry for 3 min. Add broccoli and peas, stir-fry for 4-5 min or until crist-tender. Stir broth mixture, add to the skillet with the chicken. Cook and stir for 2 min. Stir in cashews. Serve over rice or noodles.
This is really good. Two problems with it is (1) left overs are mushie and (2) It's hard to keep the cashews away from Ron until the day I fix the dinner. I usually take 1-1/2 cups of nuts out of the can and hide them until ready to use them. |

Julie, I'd love your Monday recipe for the pork chops, since I have lots of them. I am doing pork chops today with pinto beans and potaoes and something green. Brussel sprouts sounds good.
My hubby has been home now for 2 months on sick leave. I am kind of running out of ideas. Not food, just ideas.
But Monday we'll have a deer roast with potaoes, carrots and onions.
Tuesday a ham steak with rice and green beans.
Wed. stew from the leftover deer roast.
Thurs. Ham bean soup.
Fri. my parents are coming up so I'll have to have something country and easy.
Sat. We'll have my mom's late birthday party. Maybe have pizza and salad. And of course cake.

Monday Polenta with veggies Tuesday Homemade pizza (I use a wheat tortilla - works great for one) Wednesday stirfry Thursday something quick as this is my favorite tv night. Friday too far out to plan yet. :)
