I just received a ton of apples from my parents who didn't think they would be able to eat them all before they went bad. I don't think we will either! I would like to do something with them other than the usual. My standards are either cooking them with pork chops or making an apple crisp. I'd like some new ideas! Either for cooking them fresh or for preserving.

You can make them into pies, do not bake, then freeze and bake later. You can also make and can apple pie filling. Applesauce and apple butter are easy, and can be done in the crock pot.
The local restaurants have caramel apple pie-

What kind of apples? Some are good storage, but you will need to keep them cool in a fridge or crawl space. Apples go bad fast out in open air.

You can make apple sauce and can it--that's something to use up quite a few and then it keeps on giving!

Also, I posted this recipe a few weeks back on the forum--uses 2 apples, but I guess you could use more if you needed, too. This is my favorite savory apple recipe--it's such a wonderful treat!

You can also peel, slice, and freeze them in bags to use for pies or crisps later.

I have an applesauce pecan bread recipe that is really good..........you can puree up the apples in the blender and use instead of canned apples. It makes 3 loaves
Applesauce Pecan Bread
4 eggs
2 sticks margarine ( not spread)
2 cups sugar
1 and 1/2 cups brown sugar
2 tsp cinnamon
1 tsp cardoman ( you can substitute cloves if you wish )
2 cans of applesauce
4 cups self rising flour
2 cups pecans ( you can substitute walnuts if you wish )
Preheat your oven to 350 degrees and then take your 4 loaf pans and spray sides and bottoms with Pam cooking spray
Next mix your eggs , margarine and sugars and spices together .
Next stir in your nuts and then add the 2 cans of applesauce and mix well .
Stir in your flour and be sure to mix everything well and then place the batter in your 4 loaf pans ( be sure you have used the Pam spray first)
Bake at 350 degrees for approx 30 -40 minutes.
ALL OVENS COOK DIFFERENTLY SO I CHECK AT 3O MINUTES AND IF NOT DONE WILL CHECK AGAIN AT 35 and if need be 40. ( My oven makes a perfect loaf at 35 min)
***To check use a toothpick or a butter knife and place in middle of the loaves and slide thru the loaf and it will pull out clean when done .
Cool the loaves 15-20 min in the pans and then remove and finish cooling several hours .Place in icebox. Keeps up to 2 weeks in the icebox

I participated in a cooking class organised by the Deschutes Library last night entitled "Recipes with Apples". It was very timely with apple season upon us. Recipes included:-
Autumn Farro Salad
Cider Braised Chicken with Pan Sauce
Baked Apples
Mulled Cider

The teacher also demonstrated how to pair brussel sprouts with maple syrup, olive oil and apple. Roasted together then sprinkled with sesame seeds - Yum!!
And, of course, there was the good old-fashioned braised red cabbage with shallots, caraway seeds, apple cider and apple.

Isn't it just amazing how versatile the humble apple can be!

Lindsay, everyone has given you lots of great ideas to enjoy all those apples. You can also make apple butter that is delicious and easy to can for sharing or storage.

Lindsay, We visit our Hood River Fruit Loop every year and bring home pounds of apples, this year we only picked 30 lbs, just yesterday, I peeled about 15 lbs of apples and threw them in my crock pot to make home made applesauce. THE BEST! Beats any store boughten apple sauce I've ever tried. Nothing added, just good ole peeled and cored apples. I usually use three different kinds and just throw them in together. Fantastic by itself or on ice cream, yogurt, oatmeal... mmmmmmm. Have fun with your apples!

Lisa your Applesauce Pecan Bread sounds so good! 4 loaves is a lot, do these freeze well? I only have a few people I can share with.
