Happy birthday Nicole! I hope he takes you someplace yummy!

Ric is working through a case of food poisoning (ladies, AVOID Qdoba), so he couldn't hold supper last night. I had breaded cod and a mocha cupcake.

Tonight I might do the shrimp and broccoli alfredo if he's up for it.

ooo, Nicole - Happy Birthday! I don't know about you, but letting someone else do the cooking always sounds good to me!
Yesterday was too busy to stop and post, but I made meatloaf, potato wedges, and broccoli.
Today? I better look in the freezer!

As for dinner at my house . . . I'm working until 6 PM, then will go on power walk. It'll be just a piece of fruit for me. Hubby is on his own, but he is an excellent cook. Don't know what he'll have!

Thanks farmgirls, y'all are too sweet! Looking forward to a night off from the kitchen.

@ Alyce - hope Ric gets well soon! My poor SIL had food poisoning so badly she had to go to the ER and was ill for over a week. They'd eaten at a buffet restuarant for a party. Health Dept. traced it to the broccoli. Ugh!

@ Kristina, that Smoky Corn and Potato chowder sounds so good! Do you have a recipe you could share?

I know this may not help, but I "wing" it and make it different each time.

I dice peeled potatoes and fill enough water to cover them in a crock pot. Some times I use extra broth (and with broth I don't add extra salt). I toss in organic whole kernel corn, creamed corn (about 1 1/2 cups each or more). I cook that on low all day, and 1/2 way through I add sliced smoked sausage (today I used smoked turkey sausage). When it's about 1 hour from serving I add milk (however much you like, and I have used goat's milk, canned milk and regular whole organic milk). I shred Swiss or cheddar cheese (today I used Swiss). Serve after the cheese melts and milk warms in the chowder. Add pepper (and salt if you are not cooking in broth).

An update for my salad. Some of us liked it, some didn't. It had winter greens, cooked onions and shallots, redskin pears, and goat's cheese. The dressing was made with some of the cooked onion, fresh parsley, wine vinegar, and vegetable broth (salt and pepper too). It was okay, but I would like to add more greens of a different type. The kids loved the goat cheese with the pears.

Wednesday is not going to be a "fancy" dinner. With so many kids sick right now, I think I'll stick with grilled cheese and maybe tomato soup.

Thanks, Sharon. He is; he slept for 11 hours last night and managed to hold down food. I am starting to think the shrimp alfredo is a bad idea since every time I plan it, something goes wrong!

Tonight may depend on how my visit to the dentist goes. I'm kind of craving salmon though.

Glad to hear he is doing better Alyce. That's a tough thing to deal with and so miserable.

Salmon sounds really good! I have been craving that for awhile.

Tonight will be something light with chicken. Haven't figured that out yet.

Kristina, Tomato Soup and Grilled Cheese is my FAVORITE comfort meal :) I hope the kids are feeling better soon!

Sorry to hear about everyone being sick at your house, Kristina. Glad Ric is feeling better, Alyce. Thanks for all the wonderful wishes yesterday, sisters! DH definitely outdid himself and we three had the most wonderful dinner. So, tonight is leftovers from our dinner out last night, followed by more of the wonderful birthday cake DH got me from some cute little bakery near where he works. After twenty years, he still manages to surprise me. Gonna have to walk the dog double this week from all the calories, LOL! But it was all so delicious, and love that we are getting two meals out of it, to boot!

It was around 70 at dinnertime, we had daddy burgers. DH mixes it himself and spices it up just right. Tomorrow is Fanchese's.

Wednesday we ended up with peanut butter and banana or jelly sandwiches and pears - power was out for four hours.

Tonight is Thursday, busy night. Making "Texas Rice and Beans", a family favorite. It has beef, kidney beans, peppers, tomatoes, and tabasco but it is not spicy. Served over hot rice.

Alyce, sure! Why not? Brown the meat, (or turkey, etc) in a large skillet with one chopped onion, and one chopped green pepper. Add one can of tomatoes (undrained), and one can of kidney beans (drained). Salt and pepper to taste. Season with 3 - 4 drops of Tabasco sauce. Let simmer, covered half and hour (or peppers are soft). Serve over hot, cooked rice. Enjoy!
