Hooray! We got power late last night. I made a delicious hot meal: Pot roast with Danish green pepper sauce, and roasted cauliflower, new potatoes, and carrots, all tossed and roasted in olive oil, sea salt, and thyme.

Helped the girl scouts sell cookies at a cookie booth for four hours in 37 degrees today...it was great fun but made me want chili!!!

DD and I have a "date" planned...she is learning some songs at school from a musical from when I was a kid, so we are making homemade pizza and watching the DVD together in front of the fireplace. Maybe will bake something yummy for dessert. Mom and Daughter Movie night!

Sorry I haven't been on here, but we are still trying to get organized and clean up after losing a week to the storms. We are good. Anyway, last week during the snowstorm, DH made dessert crepes the Danish way. Got me thinking, I love a stuffed "dinner crepe" so this week I plan on making a new recipe...chicken/broccoli stuffed crepes with a white cheese sauce. Let y'all know how it goes...

Last night we had a mustard crusted broiled cod, on a bed of spinach and onion, boiled potatoes.

Today: baked french toast for after school snack, and dinner is taco salads and tacos, and freshly made organic apple sauce.

Okay...the crepe recipe was divine! DD gobbled them up and asked for more. DH was still talking about it this morning, how good it was. Success!

For tonight: I'm thinking three bean sausage soup with garlic bread.

UGH! I am soooo sick of turkey and dressing and turkey and turkey and turkey...

Tonight I am making a brown-sugar sauced meatloaf and sweet potatoes and carrots roasted in the oven. And a nice, big, green organic salad. What's on your table?

Made MaryJanes' project of the week, Corn and Bacon Chowder. It was very good. Hit the spot on a snowy evening. Making "Crock-pot Chicken Delicious" tonight, over organic brown rice. Need a veggie...

To use up the last of our turkey, I mixed in home canned zucchini relish and some lite safflower mayo. I grilled it between two pieces of bread, in olive oil - yum!

We've been on a tight budget, so I'm making meals with what's in the freezer and pantry - tonight it's ham bone soup and corn bread.

Fish, at least for DH. Friday nights are for fish around these parts. every restaurant, cafe, hole-in-the-wall place offers a Friday Night Fish Fry. i don't eat fish, had my fill growing up.

I'm tired of turkey to, so my dear puppy is having the last of it for supper tonight. It cost (per ounce) about the same as her dog food, so why not. It's either that or let it grow fuzz in the fridge.

I'm having taco salad with the second half of my meat I cooked up last night. I probably need some veggies anyway.

For my family, it will be spaghetti (using my homemade canned sauce) homemade toasted garlic bread, Mixed green salad, and store bought cheesecake. Now don't chide me about the store bought cheesecake, I get enough of that from my dh. LOL!

i decided to make a full breakfast this morning as it was such a nice morning so i made waffles with MJs ww baking mix added dried apricots and pecans. turkey sausage and scrambled eggs. it was great. during the week it's too hectic for more than oatmeal.

One of my knitting students owns a farm and brought me two and a half dozen eggs, so I am whipping up a quiche tonight. I've got swiss cheese, onions, broccoli and may toss in some ham. Making my favorite MJF pie crust recipe for the crust. The eggs are all different colors and sizes, almost too pretty to eat! LOL! Funny how we are all sick of that turkey! :)

Last night I made a Chicken Succotash with Ginger Sweet Potatoes Toss. It sounds fancy, but it's actually a low cost budget meal. And good too.
