Nicole, I make up my own instant potato mix that serves eight. While the water/broth is heating I add 1/2 tsp turmeric.

I make my own yellow rice mix.
1/4c Curry Powder
1/2 tsp ground cumin
1 Tsp turmeric
I add 1Tsp of mix to 1 cup un-cooked rice. I like strong flavors so for those that don't it can be added to taste.

I add turmeric to egg dishes, dried beans, and some vegetables like cauliflower. It pairs well with ground cumin and to beef up curry powder.

I'm making Chuck Wagon Soup this morning. It's one of those soups where you open the refrigerator door and use up all the leftovers from the week and a handful of frozen veg. What makes it Chuck Wagon Soup is one can of Wolf Brand chili. Here in Texas it has to be Wolf Brand. It's 28 degrees right now so a big bowl of chili soup will hit the spot.

Sara, I haven't heard that in a long time..."Wolf Brand Chili". Grew up on that, for lunch and recipes, when my mom didn't make her homemade one. Can't get it here, of course. I can still see the label! LOL!

Last night we had fajitas for dinner. They were good, and something I hadn't made in awhile.

Tonight I am making a stew with boneless pork, apples, cranberries, and sweet potatoes, and serving it over brown rice.
Looking for a new recipe to make for tomorrow.

Tonight is taco salad. If there are any left over goodies (not the lettuce)I put them all together and add rice for a hot dish. Yum.

Tonight we are having leftover beans (from last night's red beans and rice) and homemade cornbread. I mixed up two recipes so who knows how the cornbread will turn out ;). I also whipped up a batch of brownies to which I added pecans, chocolate chips and marshmallows. I will serve that with some vanilla ice cream. I taste tested the brownies already and goodness are they delicious!

Today is a nibbles kind of day. A little of this and that. Been hungry for large elbow macaroni & tomatoes so I made a pot of that. Will eat on it today and freeze the rest. Cooked pasta & tomatoes is a good & quick start for many dishes.

Belgian waffles! I need to pull out my Belgian waffle maker. I keep saying that. I have a terrific recipe of my mom's. Made a big spiced rub chicken with a green salad tossed with greens, cranberries, carrots, and olive oil/apple cider vinegar, and a trough of Greek Macaroni and cheese this weekend for my dd and her friend. It was a good, basic dinner and the little girl was bragging at school about the macaroni so I guess that was a hit!

Tonight it is warm! Almost sixty degrees...yippee! Making eggplant curry with jasmine rice!

We had hamburger from our own homegrown beef made into taco meat. My hubby made his into a burrito . . . (nope, not a taco) and I had a taco salad.

The only thing I cooked today was a butternut squash with blood orange, dried apricots, mild golden & red jalapeño peppers, maple syrup, Merlot, and S&P. For a throw together dish it turned out really tasty and quite pretty if do say so myself.

Today is a cooking day. Went to the grocery store and bought meat in mark down bin so I am cooking all of it today. All meat was still in date.

2 lbs of Angus ground chuck - sautéed with Italian seasoning - when cooled will freeze on tray to put in zip lock bag - I can then take out how much I need for a dish.

2 pkg of soup bones - on the stove now for broth. Will freeze.

1 lb ground bison - have it marinating in the fridge with MaryJane's Indian Blend Rub - will have part of it for supper and freeze remainder. I have never eaten bison so this is new for me.

I wrapped the bison patties in un-cured bacon and oh, it was soooo good. Now I wish I had bought a couple of more pkgs.

Oh, Sara, I LOVE bison. Have purchased some and made patties. Around here it's pretty pricey so haven't done that in a while. However, we have a LOT of our own homegrown beef in our freezer(s) quite a lot of it is ground and it is SOOOOOOO tasty!

CeeJay I would like to have the recipe for carrot potato soup.

Today it's Naan flat bread with olive oil and tomatoes with green chilies instead of pizza sauce. Cooked ground beef, grated Parmesan cheese, portabella mushroom. One flat bread made enough for my lunch and early supper.

Hi Girls,

Sorry to not change the date there...our schools were out for winter break. :)

Monday I had my best friend over for her birthday. I made a chicken broccoli casserole (everyone loves that), a big Greek salad with homemade dressing, fresh, crusty bread, and a homemade chocolate layer cake with chocolate icing. I haven't baked a cake in awhile, and it was quite tasty, if I don't say so myself. I've been watching what I eat and exercising, so I only had a baby piece. Or two. ;)

Last night I made a new thing I've whipped up that we love. I adore roasted veggies, and thought, "Why not make a meal of them?" I've made it twice now and my family LOVES it. I take carrots, red potatoes, sweet potatoes, green cauliflower, red, yellow, and orange bell peppers, and onions, cut into bite size pieces. I toss it all with olive oil and season with pink salt, pepper, and garlic powder. I roast the veggies in the oven, and make brown rice with a teaspoon of turmeric (thanks for the tip, Sara), and a handful of kale. When the rice is done and kale is cooked down, I toss it all into a bowl. I then use a cup of organic vegetable broth, heated and pour over the mixture, like a broth bowl. It is satisfying, tasty and very healthy! You can use whatever veggies you like.

Tonight I made some apple chicken sausage links with southern style seasoned collard greens and some macaroni and cheese, to make my dd happy.
