The past couple of days we have been so busy that I haven't had time - or desire! - to cook. I had some of those homemade artisinal no-knead bread rolls pre-made in the freezer, so I took out a bag of them, and we've been making our favorite sandwiches. The first night I took meatballs out of the freezer, put them in my bean pot with canned spaghetti sauce, and baked them 'til hot. Served them up on the rolls that had been toasted with garlic butter and melted provolone. Oh my gosh, super easy and so good! The next night we had deli roast beef sandwiches with hot pepper jack cheese and loaded with garden veggies, with home canned mandarin oranges on the side. Tonight we made cold Italian hoagies, again, loaded with garden veggies and with fresh sliced peaches on the side. It's been so nice... But we're out of bread now, so tomorrow I'm going to probably have to cook... :( Maybe we'll have grilled chicken salads with sliced apples, red onion, craisins, pecans, feta and raspberry dressing... Oh! That sounds good to me! :) Hugs - Nini

Vegetarian taco flavored soup. I cleaned out my refrigerator of a cup of this ~ half cup of that. Skillet corn, cream Crowder peas, and stewed tomatoes. Added dried kale, Tex-Mex blend dried onions, and dried red bell peppers.

Judith, your meal sounds classic and oh! So good! What time is dinner?

Nini, I am with you...been too hot the last couple of days. I actually got overheated at the park yesterday so I am staying out of the heat.

It's been 100 degrees and only cooling to the 80s at night, so the oven is OFF! I made homemade tacos the other night that were amazing. I bought organic taco shells from Trader Joes. Made my filling with organic ground beef, and onion, garlic, chili powder, salt, pepper, dash or two of Tabasco, green chiles, and a red sweet pepper...none of that MSG laden fake powder stuff here! Topped them with cheddar cheese, romaine lettuce (shredded), fresh garden tomatoes, and organic yogurt. SOOOOO good! Ate the rest for lunch. Served with chili beans as a side.

Last night was 100 again, so we had sandwiches with tomato-pepper soup. Simple and quick.

Tonight I am making a sausage and pepper stir fry with organic gluten free pasta. It looks and sounds good, so we will see how it goes. One pot stove top meal.

Yes it has been too hot to have the oven on. We were supposed to get rain today but it didn't, but it did cool us down. Today was the first day this summer I cooked beans and you all know how I like my heirloom beans. Royal Corona beans are a very lg Italian white lima bean grown in Poland. Cooked with jalapeno bacon, fresh sage & thyme with a touch of red pepper flakes. I ate it topped with avocado and salsa.

Mmmmm, YellowRose you are making my hungry!!! :)

Tonight we are having sloppy joes and hominy - nothing fancy! Just using up freezer/pantry stock in prep for the burst of freezer cooking I'll be starting in a couple of weeks! Need to make room in those freezers!

Jaime, I like hominy especially in veg soup.

Today it's a patty melt with angus beef patties on Forman Grill - topped with blue cheese slices - on rye bread. Will eat one and freeze three patties with cheese.

Looks like tonight will be fast food, boyfriend and I are driving to Lake Barkley in Kentucky to spend the weekend with our friends in a rented houseboat :) We want to get in as early as possible so that means a dinner on the go!

Was not able to log on this past week after a lightning strike. Now I'm back. Last week I made a delicious meal of a pot roast with roasted beets, carrots, blue, red and white potatoes (my favorite, farm fresh!), and farm fresh picked corn. The next night I made it into bubble and squeak. Tonight I am taking the green beans and some of the tomatoes from the garden, and pan-sauteing in a bit of butter with onions. That will be our side dish. For the main dish, I am making mock-fried chicken in the oven, as the humidity has broken a bit. Since they are breasts, it won't take long to bake.

I can't wait until some cool fall weather so I can bake again!

Last night i baked a chicken served with garden green beans sauteed with onions. Sooooo good. And simple. Tonight I am shredding the chicken for a chicken broccoli casserole. Finally I can turn on the oven!

Pioneer Woman Pot Roast!!! BOY was it good! We haven't made that in ages!

I'm making Eggplant Parm tonight with the eggplant from my potted plant. Always have trouble growing eggplant in the garden but I've had great success this year with it by the backdoor. I'm doing a wedge salad with peppercorn ranch dressing.

Yesterday was grocery shopping day so today I'm cooking it all up. Don't know yet what I will have for supper. Most of it will go into the freezer in individual servings.

In the oven I have meatloaf and 4 angus beef patties.
Tex-Mex chicken veg soup made with rotisserie on stove.

Marly...my favorite dish!! Tonight I am making squash casserole with the big squash I harvested. It's a family favorite and I promised one to my dd. I think I might put a meatloaf with it, and some sort of potato. Last night I made veggie curry over rice. Yummy!

We had honey garlic slow cooked chicken breast with baby red potatoes, carrots, and green beans, first time trying recipe, also had seven layer salad...hit the spot. Spent day in kitchen, also cooked zucchini breads, apple pocket pies and pumpkin pies. Yes, fall baking itch has hit!

Saturday night we had Chicken Fried Steak but it was out of a box of frozen ones DH got a Sam's - they were just ok. Not as good as when we make them! To go with I made PW Mashed Potatoes and Stuffed Mushrooms!

Last night was Chili and Cheesy Green Chili Cornbread!

April, I am going to do slow cook recipes once a week. Would you share your honey garlic slow cooked chicken recipe with me?

Oh I have not had a chicken fried steak in awhile...mouth watering, Jaime!

Last night was hubby's danish dish (Millions of beef) over mash. Making chicken soup (My Magic Elixer) as dd is home with a thing.

Nicole hoping DD will recover with the help of your chicken soup.

Roasting veg seasoned with MJF Indian blend. It's one of my go to spice/herb mix when I can't decide what to do. Will use the roasted veg for several meals.

Whole chicken was on sale for 69cents lb so I am roasting chicken with veggies. Seasoned with fermented lemons, rosemary, lemon grass, and green part of leeks in the cavity; rosemary and fresh lemons under the skin.

Sara that sounds so yummy! Tonight we had barbeque burgers with homemade organic barbeque sauce, potato salad, and baked beans.

Last night we ate out - at Conencticut's oldest inn from the 1700's!
