I'm prepping and cooking what I bought yesterday so it'll be a little of this and that. Cauliflower with cheese sauce, pork chop, and my homemade sauerkraut. I will cook a large pkg of assorted pork chops - have one for supper and ground the rest for sliders to freeze.

Sounds yummy, Sara! :)

Tonight we are having Southwest Chicken Tortilla Pinwheels and Texas Trash! DH and I always have our "Fun Food Fridays!" where we have appetizer type things for dinner...I have shredded cooked chicken in the freezer to jumpstart the pinwheels which is nice.

It's just Thing #4 and I tonight as the rest of the family is off on school activities. We're cheating and making a Little Caesar's Pizza Kit we had in the freezer from a fundraiser. Pizza, crazy bread and chocolate chip cookies.

Hubby surprised us with Chinese takeout, but he bought a lot, so we will be eating it tonight too! Jamie sound like a fun meal! Sara, your meals always sound good and full of great ideas!

Thanks Nicole. Today it was throw-it-together casserole. Thursday I cooked a large package of assorted pork chops and ground in food processor. Made 12 sandwiches and froze them. Had quite a bit of the cooked ground pork left so I layered it in a round Pyrex dish. Added Uncle Ben's 90 minute Spanish rice and a can of Ranch Style beans; mixed it together. Topped with Mexican mix cheese and cheddar. Baked in 350 oven until cheese was melted and toasty. Serve with salsa. Will freeze most of the casserole in single servings.

Yum! I am not thrilled about eating "take out" too often, but it was nice for DH to surprise us. Now I get two nights off from cooking, which is nice!

One of the best things about take out is no cleanup. Some days I nibble from dawn till night just to keep from washing dishes. Other days I can use every pot and pan and actually enjoy washing them.

Did a LOT of cooking over the weekend and we have leftovers for tonight and maybe tomorrow!

Made Chicken Pot Pie with Cornbread Topping on Saturday. Then yesterday we cooked a couple marinated turkey breasts I'd had in the freezer and used some for lunch and the rest will be for lunches this week. I also made Swiss Meatballs with Dill + Beef Mushroom Gravy over mashed potatoes. Tried a new baking powder biscuit recipe but didn't like it. :( Very dry!

DH baked up a batch of Tilapia too that will be for his lunches this week as well.

Jaime all your dishes sound yummy. The chicken potpie with cornbread topping is something I might try. I have topped Tex-Mex seasoned ground beef with cornbread.

The kitchen is stocked! Tonight it has been requested we have fajitas. I take chicken, red and green peppers, onions, carrots, and sometimes squash and stir fry them up in the cast iron skillet using either coconut or olive oil. I season with cajun spice, and add a smidgen of water so they don't dry out. I cover everything and let it simmer a bit. I serve them on corn tortillas warmed a bit, with yogurt and cheddar cheese, all organic. Mine are not as greasy as those in restaurants.

I agree, chicken pot pie with cornbread sounds DELISH! I usually make mine with MJ's budget mix.

I couldn't wait for Easter... Last night I made a roasted boneless leg of lamb. It was soooo good. We have enough left over for two more meals, so eventually we will have lamb au jus and Spanish lamb. Can't wait!

Girls, you've inspired me! I think tonight it's going to be chicken pot pie! Thank you!!!

Tonight I am trying to use up items that have been in the freezer a while! We have the last of a box of chicken fried steaks we bought at Sams I'll make up - it comes with a gravy packet. Then I'll use some of the diced hashbrowns from the freezer - pan fry those up with diced bell pepper (also from freezer) and onion and maybe fry up some of the bacon pieces from the freezer as well.

Jaime I like eating out of the freezer - it makes meal planning so much easier.

For breakfast I had a ground pork chop sandwich out of the freezer. The bread toasts in the oven and I like toasted sandwiches for breakfast.

Last night hubs made Million Beouf - a Danish meal and one of our family favorites. He used veggie broth and added a bit of worcestershire sauce in it. It was AMAZING! I will eat the rest for lunch today. :)We also had a great big salad with mixed organic greens and baby spinach, heirloom tomatoes, avocado, and red onion. I pigged out!

Nini, I have been craving Irish fare lately, too. Made some last week. I think I will put Irish stew and soda bread on my dinner menu.

Girls, I need to eat out of my freezer, too! It's stocked. Time to eat to the bottom for summer.

Tonight I am making Eggplant curry with eggplant, tomatoes, carrots, onion, curry and ginger over rice.

St. Patty's!! I've got corned beef on the stove, serving it with potatoes, cabbage, peas with pearl onions, and MaryJane's recipe for soda bread. I am using my grandmother's vintage linen hand embroidered tablecloth (done in green), and will serve ice cream with Thin Mint cookies for dessert. Hubs and I will have Irish coffee.

We had a DIY pizza night this weekend - and it turned out pretty well! Made a regular type of pizza dough that rose overnight in the fridge - split that and made one deep dish skillet type pizza and use the other half to make a copycat recipe of Papa Johns cheesy bread.

Also made a no-rise thin crust pizza as well.

Everything was really good and we made some notes on things we'd do differently the next time.

Also made a pot roast on Sunday - which was great as always!

Jaime, your pizzas sound yummy. I make pizza using nana bread from the deli. I have it often for breakfast. Not a fan of eggs or other breakfast food in the morning but do like them for lunch or supper.

I have beef broth with meat in the freezer and roasted veggies from yesterday so today it's beef veg soup.

Oven baked boneless pork chops with coconut milk, tomato paste, & MJF Indian Blend over rice. Easy-does-it curry.

Vegetarian for lunch. Baked potato, acorn squash with prunes/maple syrup, and cranberry beans.

Braum's hamburger from the freezer for supper. I buy their bag of five plain burgers and freeze them. Very good when warmed up in the oven.

MJF bake-over with Italian sausage, leeks, portabella mushrooms, extra sharp white cheddar cheese, dried Mexican oregano, red pepper flakes and 1/2 wine glass of Merlot. It was so good I shared half with my neighbors.

Tonight I am making a 1/2 batch of Texas Trash - a cheesy bean dip we'll eat it with tortilla chips and a 1/2 batch of Beef Stuffed Crescents - crescent rolls filled with a mixture of browned ground beef, green chiles, cream cheese and spices. What is nice is that each will use up half of one block of cream cheese - no 1/2 package sitting in the fridge staring at me! lol

Hi Everyone!

I am sorry as it has been almost a month! I was very, very sick with a second bout of bronchitis/walking pneaumonia thing. Twice this winter I got hit! Anyway, then I was in TX for 10 days seeing family. I am back and trying to get caught up.

Jaime, I loved being back in Texas with all the AMAZING food (much covered in queso)!

Tonight we are having baked chicken with a nice dry rub, fresh green bean and cherry tomatoes, and roasted red potatoes and peppers.
