I still have choke cherries in my freezer from last summer. I am going to be needing to work them up soon. Getting a 1/2 of a beef and need the room. What else can I do with them except jelly?

I need to look up recipes. I have a book called The Rocky Mountain Berry book which includes some recipes for chokecherries. I will post some when I can.

Hey Kem :)

Here are some recipes I found. I haven't tried any yet so I'm not sure how they will be but the vinegar sure would be nice :)

CHOKECHERRY VINEGAR

Mash the cherries thoroughly, then cover with weak vinegar (half white wine
vinegar and half water). Let stand 2 days, stirring each day. On the third day drain and add 1 cup granulated sugar for each cup of juice. Let it come to a boil, settle well and bottle or put in jars. Two
tablespoons of this to a glass of water makes a splendid
summer drink.

Pioneer Chokecherry Syrup

4 cups Chokecherry Juice
4 cups sugar
1 teaspoon cream of tartar

Cook over medium heat until mixture coats the spoon. Refrigerate for immediate use or pour into sterilized jars and process in boiling water bath, 10 minutes for pints.

Chokecherry Pie

1 (9 inch) baked pie shell
2 cups chokecherry juice
3 level tablespoons cornstarch
1 cup sugar
small pinch of salt
1/2 teaspoon of almond extract

Cook until thick, stirring constantly. Cool, pour into pie shell and chill. Serve with whipped cream.

Chokecherry Apple Butter

4 cups apple pulp
2 cups chokecherry pulp
5 cups sugar
1/2 teaspoon almond extract

Heat pulp to a boil, stirring carefully. Add sugar. Stir constantly until it just begins to thicken. Add extract and blend. Ladle into sterilized jars. Adjust lids and process in a boiling water bath 5 minutes. Makes 8 half pints.

Thanks for posting. My dad grew up with choke cherries and probably had the syrup. I will share these recipes with him.
