Hi everyone! I've looked up and down and haven't been able to find a peach jam recipe using the ChillOver powder. There is a strawberry with other berry substitute options listed in the packet but nothing for peach. I also looked in the MJ Ideabook.

I've had many peach jam "flops" over the years ending up with lovely peach syrup but my heart wants jam . Please if you've had success and are willing, list your recipe. I'd really appreciate it (so would Erik, my husband!)

Katie, I recently made peach jam using MJ's ChillOver powder and the strawberry jam recipe in the MJ Ideabook. Every jar set up just right! I was very happy with that recipe. It sounds like you already have the recipe.

I used the ChillOver powder for a mixed fruit jam (I think I used 2 tsp. for a recipe that filled 6 pint jars) and it worked great!

I have a recipe for using regular pectin but not the ChillOver powder. What's the substitution ratio?
Does 2 teaspoons ChillOver to 6 cups peaches sound right?

I used 5-6 lbs of cut up chunks of fruit without skins, using stuff I had on hand (peaches, plums, strawberries, blueberries, pineapple), 2 cups of sugar, after it had been cooking in the crockpot a few hours I mashed the fruit with a potato masher (I like my jam chunky), cooked another hour, scooped out the about 1/2 of the liquid, added the chillover powder and cooked 5 more minutes before hot water canning process.

MJF Chillover® Strawberry Jam Recipe

2 lbs. strawberries, washed, hulled and crushed
to yield 4 cups crushed berries
2 cups organic cane sugar
2 packets MaryJane's Chillover® Powder

1. Combine crushed strawberries and sugar in a large pot. Bring to a boil, stirring to dissolve sugar.
2. Sprinkle and stir Chillover Powder into liquid and boil rapidly for 3 minutes, stirring constantly.
3. Remove from heat and can in sterile jars (refer to a canning manual for complete canning instructions).

Chillover® Raspberry Jam
Substitute raspberries for strawberries.

Chillover® Blackberry Jam
Substitute blackberries for strawberries.

Thanks Jana! I never tried making jam in a crockpot before, maybe tomorrow's a first. I have leftover peaches I froze from last peach season, I think its best I use them before the next round comes in (which I have to say I can't wait for.) I'm also looking forward to making my plum-anise jam. It's always a big hit at Christmas

You are welcome and good luck with the peach jam! I have never tried plum -anise jam, but will have to venture out a little now that I have been canning for three years. Have you tried "Christmas Jam"? It is a strawberry cranberry jam and the color is deep and beautiful.
