I am sharing what I made for the intermediate and expert merit badges.

Intermediate
I created a new chill-over recipe and shared it on the farm girl connection. I did Orange cherry and just orange. I have never done that particular recipe the orange cherry. This is exciting for me. It tasted very good it was delicious.

Expert
I created two more chillover recipes and then had a little small party with my little daycare kids again and my family and we ate them. We all very much enjoyed them. The chill over powder is awesome to work with I love it I will be purchasing more in the future. I made an orange Peach and a cherry strawberry for my 2 new ones. It sets so fast.

They all look delicious! Great job on getting so many done to share with the kids. The chill-over powder does work great. Congratulations on have so much success using it!

I have had a great time in the kitchen, experimenting with MaryJane's ChillOver Powder. After making some of MaryJane's recipes, here is one that I have created myself:-

Mango Mousse

2 ripe mangoes
1/2 cup heavy cream
1/2 cup plain Greek yoghurt
2 tsp ChillOver Powder
1/2 cup hot water

Blend mango, cream and yoghurt in a food processor. Set hot water aside until heat is reduced to medium-low and slowly sprinkle in ChillOver Powder, whisking constantly. Add to mango mixture. Place in suitable bowl and refrigerate until set.

With summer fast approaching, it's time to enjoy the season's best produce. I have created 2 Chillover recipes for my expert badge using strawberries and passionfruit. Enjoy!

Strawberry & Lemon Curd Mousse

2 x 250g punnets strawberries, hulled
1 ˝ tsp MaryJane’s Chillover Powder
2 tbsp water
3 egg yolks
˝ cup caster sugar
1/3 cup lemon juice
2 cups thickened cream, to serve

Cut 1 ˝ punnets of the strawberries in half. Reserve remaining strawberries for decoration and refrigerate. Process halved strawberries in a food processor until smooth. Strain. Discard seeds. You will need 2/3 cup puree.
Sprinkle MaryJane’s Chillover Powder over water in a small, heatproof jug. Stand jug in medium saucepan of simmering water. Stir until Chillover Powder has dissolved. Remove. Cool to room temperature. Stir into the strawberry puree.
Make lemon curd by combining yolks, sugar and juice in a medium bowl. Sit bowl over same pan of simmering water. Whisk constantly until slightly thickened. Remove bowl from heat. Cool down to room temperature. Beat cream in a bowl with electric mixer until firm peaks form. Fold in lemon curd.
Divide mixture evenly between two bowls. Fold puree into one half until combined. Divide lemon mixture among six serving glasses (200ml capacity). Top with strawberry mixture. Refrigerate for about 4 hours, or overnight until set. Serve mousse topped with whipped cream and reserved strawberries.


Passionfruit Flummery

1 orange
1 cup water
˝ cup caster sugar
2 tsp MaryJane’s Chillover Powder
Extra 2 tbsp water
2 eggs, separated
300ml tub thickened cream, whipped
˝ cup fresh passionfruit pulp
Extra passionfruit pulp, to decorate

Using a vegetable peeler, peel rind from orange. Squeeze juice. You will need 2 tbsp. Combine rind, water and sugar in a small saucepan. Stir over a low heat until sugar is dissolved. Bring to the boil. Boil, without stirring, for 2 minutes. Strain.
Sprinkle Chillover Powder over extra water in a small heatproof jug. Sit jug in a saucepan of simmering water. Stir until Chillover Powder is fully dissolved. Stir in orange juice.
Place egg yolks in the small bowl of an electric mixer. While whisking on high speed, slowly pour in warm sugar syrup, followed by Chillover mixture. Beat for a further 3 minutes, or until frothy. Refrigerate, covered, for 25 to 30 minutes, stirring occasionally, or until mixture is starting to set.
Beat egg whites in a clean, small bowl of an electric mixer until soft peaks form. Fold in egg yolk mixture with cream and pulp. Spoon into 6 serving glasses (1-cup capacity). Refrigerate, covered, for 2 hours before serving. To decorate, top with extra passionfruit pulp.
