Ok, so I wanted an easy peasy recipe for pumpkin oatmeal cookies using a ‘bisquick” mix… Nada!
So I created my own version..
With caution to the wind I mixed some bisquick mix, coconut flour and bread flour, brown sugar, Trader Joe’s pumpkin pie spice, butter an egg a can of pumpkin purée and 4 handfuls of old fashioned oatmeal and a capful of vanilla... mixed it up, plopped spoonfuls on a cookie sheet covered with baking parchment paper and baked… then I sprinkled the cooling cookies with a mixture of ground lavender buds and powder sugar… and dang.. they turned out good!

Guess what I am having with my evening tea tonight!?!?!

BTW,, it’s like eating mini scones,,
I might slice one open and add a bit of jam.
Now I just wish I had used a measuring cup and written down the ingredients! Lol!

Wow that sounds tasty. I’m not a brave cook like you Grace, I have to have a recipe, lol.

A day hemmed in prayer is less likely to unravel.

Grace, your homemade recipe looks like it turned out wonderful!! Those cookies look delicious!! How do you think the recipe turned out and would you do it again??

SO wish I had 'measured' the ingredients.. but alas,, I can wing-it again when these are done.. I might just add a few spoons more of brown sugar.. but so worth trying again...
