I found this recipe on pinterest and decided to try it tonight, I didn't have any true oranges, but used the little satsuma oranges for the zest. Turned out absolutely wonderful. Soooo good, family devoured. Would be lovely for christmas. Thought I would share:

ORANGE CRANBERRY BREAD (more like a cake)

1 HR 10 MINS - Mine cooked in about 30/40 minutes on convect bake.
total time:
1 HR 20 MINS
Easy cranberry bread recipe with orange glaze, homemade with simple ingredients. Loaded with fresh cranberries and oranges. Soft, moist but still firm.

INGREDIENTS

1 cup Granulated sugar
2 tsp Orange zest
1 tsp Vanilla extract
1.5 cups All-purpose flour
1 tsp Baking powder
2 Eggs, Large
1/2 cup Butter, Unsalted, Melted
3/4 cup Buttermilk
1 tbsp Orange juice
1 cup Cranberries, Fresh, Roughly chopped
Orange Glaze
1 cup Powdered sugar

1.5 tbsp Orange juice, Preferably freshly squeezed
1 tsp Orange zest
INSTRUCTIONS
In a large mixing bowl, mix together sugar, orange zest, vanilla extract, flour, baking powder until roughly combined.
In another mixing bowl, add eggs, butter, buttermilk, orange juice and mix until smooth.
Dump this wet mixture into the dry mixture and mix until just combined. Don't over-mix!
Gently stir in the chopped cranberries until evenly distributed.
Spread batter in a greased and floured loaf pan (Dimensions: 9×5).
Bake at 350 degrees F for 1 hour and 10 minutes or until an inserted toothpick in the center comes out clean. If the top starts to brown too quickly, you can cover the bread with aluminum foil paper in the final 10 minutes.
Remove from oven and let it cool for 30 minutes. It would eventually be warm and not completely cool.
While the bread is cooling, mix together powdered sugar, orange juice, orange zest until smooth and creamy.
Next, run a knife along the edges of the pan and then, turn it upside down gently to remove it from the pan onto a serving dish or cake dish.
Drizzle the glaze over the warm bread.
Let the glaze set for about 15-20 minutes.
Use a sharp knife to cut slices and enjoy!

April, that sounds so yummy! My favorite cookie is a cranberry orange shortbread cookie so I can already imagine how wonderful this bread is. Thank you for sharing.

April, I have cut gluten out of my diet so if I can find a gluten free flour substitute, I will give your recipe a try.

Thanks for this great recipe April. I made it this morning and it is delicious! Fortunately it isn't too sweet and the tart cranberries get to shine. My husband dislikes sweets and he thought this loaf was perfect. Again thanks for sharing this with us.

The recipe looks yummy and this time of year is the perfect time to enjoy cranberries and oranges in a loaf bread with a cup of hot tea or coffee. Yum!!
