Well, I just learned that February 22nd is "National Cook a Sweet Potato Day".
Did you know??:-
* North Carolina leads all other states in sweet potato production, producing 45% of the national supply;
* Mississippi is second with 20%. Vardaman, Mississippi has been proclaimed as the "Sweet Potato Capital of the World". They hold the National Sweet Potato Festival annually the entire first week of November.
* The sweet potato is an excellent source of vitamin A, which supports good vision, the immune system, and bone growth. Sweet potatoes are a good source of vitamin B-6, magnesium, and vitamin C.

Here's a recipe that you might like to try:-

Cumin-Rubbed Sweet Potatoes with Sage
4 medium sweet potatoes
2 tbsp coarse salt
1 tbsp cumin seeds, crushed
1 stick butter, softened
1 tbsp maple syrup or honey
1 tsp crushed red pepper flakes
Fresh sage leaves

Preheat the oven to 375F. Wash & scrub the potatoes. Mix together salt & cumin. While skins are still damp, rub all over with salt mixture. Bake directly on oven rack 1 hour, turning once to crisp evenly on all sides.
Meanwhile, for spiced butter, in a bowl stir together softened butter, maple syrup, and crushed red pepper. Roll into a log using waxed paper and chill.
Place sage leaves on oven tray & crisp in the oven for 2-5 minutes.
Cool potatoes 5 minutes. Slice open lengthwise. Top with about a tbsp of spiced butter and a few sage leaves.

Thanks Cindy for letting us know and for the recipe. My favorite way to eat sweet potatoes is baked in the oven.

I like to boil and peel them and mash with butter and cinnamon.

Did not know this Cindy, but thanks for sharing. I am looking for new ways to cook sweet potatoes, and this recipe sounds very good.

A day hemmed in prayer is less likely to unravel.

I didn't know either. I really like sweet potatoes and I'm happy with just butter and salt on them. We also do like sweet potato "french fries" which are actually baked in the oven. When we cook burgers at home that's what we have with them. Yummy!
