We all got to treat ourselves once in a while. lol Did an inventory of canning shelves for my ma yesterday. We need to organize just a bit more yet but most of it is done.

My son borrowed my electric canner yesterday, to can up a wild turkey he got. He is hoping it will work out like canning chicken. He did 4 packed quarts and I believe they all sealed. lol.

Denise here's the basic recipe for canning dried beans without soaking them.

Since I can for one I can in pint jars and do not know about canning in quart jars. I also like a lot of bean broth so I measure less than a 1/2 cup of dried beans. Other bean canners will use different measurements. I have two servings out of a pint.

Sort and wash the beans. Measure. Add beans to warm jars and ladle boiling water to 1" headspace. Add 1/4 tsp of Kosher salt for pints. Remove bubbles, wipe rim with damp cloth (I use Viva paper towels), put on lid and tighten the ring finger tight.

Put in canner. Can 90 mins for pints at 10 lb pressure

As you can dried beans you will work out your own method of doing them. As long as basic rules and times are followed methods can vary.

The day before canning I sort the beans, measure them, and put in 12 oz wide mouth jars covering with clean tea towel. I also fill my electric canner with water; load the jars; and remove the regulator so I don't forget to do so on canning day.

The electric canner warms the jars.

On canning day I put each jar of beans in a small strainer and wash. Put back into jars and when all 7 jars are washed I add 1/2 tsp Kosher salt. When ready to can I add each jar of beans to warm canning jar and proceed to can.

This method works for me because of dealing with MS fatigue everything has to be ready to go on canning day.

Sara you explained perfectly how to can beans. When I started I kept a record of how many beans to add to a jar, for each different type of bean.

Thanks Michelle. When I am measuring out the beans to sort, I look at the size and imagine how they will plump up. I'm not one to keep records or journal. I start off with good intentions then it all falls by the wayside.

Heather I haven't made wild violet jelly but have made mint jelly and cactus blossom jelly, both called for apple juice. Did you use apple juice?

It's delicious! I was a bit hesitant to try it - I don't like the perfume taste of flower teas so I didn't think I'd like it. It actually tastes like a berry jelly.

No apple juice, the recipe I use makes a tea with the flowers over night then you use the tea to make jelly the next day.

Heather, a tea made from the flowers makes more sense than using apple juice. Glad you liked the wild violet jelly. I would like to make some but I don't have enough wild violets in my yard to fill a teacup.

Way to CAN Tara!! The jars look lovely. Enjoy the goodness inside. I got the steam juicer pot out yesterday and did up some rhubarb juice. I had a couple bags of rhubarb in the freezer and I picked some new rhubarb. I did get 5 quarts of juice and all sealed.
