I thought it would be fun to discuss our favorite Christmas cookies and maybe share some recipes if anyone is interested.
Growing up I remember that we had some cookies but I can't tell you which ones or if they were the same every year because it was all about the peanut butter fudge at our house! My mom makes her mom's recipe. Her mom died when she was a teenager so I've only ever had my mom's not my grandmas. It's one of those things that is part of "mom" and I've never even attempted to make it. My mom thought it was because I wasn't interested until I told her a couple years ago it's because I know it won't be as good as hers! This year I'm going to try it.
I've also been trying out some new cookie recipes to possibly add to the cookie line up this year. I've already showed the pfefferkuchenpuppen snowmen I tried. I will be making some of those! Here's the one I just tried and LOVE:
Chocolate Mint Crisps
1 1/2 cups packed brown sugar 3/4 cup butter, cubed 2 TBS + 1 1/2 tsp water 2 cups (12 oz) semisweet chocolate chips 2 eggs 2 1/2 cups flour 1 1/4 tsp baking soda 1/2 tsp salt 3 packages (4.67 oz each) Andes mints
In a heavy saucepan, combine the brown sugar, butter, and water. Cook and stir over low heat until butter is melted and mixture is smooth. Remove from the heat; stir in chocolate chips until melted. Transfer to a bowl and let stand for 10 minutes. With mixer on high speed, add eggs one at a time, beating well after each addition. Combine the flour, baking soda, and salt. Add to chocolate mixture, beating on low until blended. Cover and refrigerate for 8 hours or overnight. Roll dough into 1 inch balls. Place 3 inches apart on lightly greased baking sheets. Bake at 350 for 11-13 minutes or until edges are set and tops are puffed and cracked (cookies will become crisp after cooling). Immediately top each cookie with a mint. Let stand for 1-2 minutes, spread over cookie. Remove to wire racks; let stand until chocolate is set and cookies are cooled.
My notes on the recipe: I made a 1/2 batch and only bought 1 pkg of Andes mints. I use a cookie scoop so mine are larger than 1" balls so I'll have enough mints. I use parchment paper instead of greasing the cookie sheets. Since the dough is in the fridge I only bake a few at a time for us to eat and they never make it to "cool" before they're gone so I don't know how crispy they get LOL! I also tried one without the mint and they're good if you're not a mint fan.

Oooh these sound yummy Heather, thanks for sharing! I will definitely try this one, I love crunchy cookies. My sisters and I usually get together and mostly make candies and pumpkin bread. When we do make a cookie it will be the seven layer ones, which I’m pretty sure everyone has that recipe. If not though I will share. |

Wanda - If I do have that recipe it's under a different name. I've never heard of 7 layer cookies. What kind of candies do you make? |

Heather the chocolate mint cookies sound yummy. I will have to try them. Wanda Sue I have never heard of 7 layer cookies so yes please share. We have not started baking cookies yet but soon. |

Ok Heather, when I say candies, it’s usually fudge and a lot of dipping things in melted dark and white chocolate, LOL. Like nuts, pretzels and store bought cookies. We like to dip NutterButter cookies in white chocolate and add broken pretzels for antlers, and red hots for the nose. We also crush a whole pack of Oreo cookies and mix with a block of softened cream cheese, (you can also do this with the Nutter Butters) then roll into balls and dip in chocolate. We usually dip the Oreo balls in milk chocolate, and the Nutter Butters in White chocolate. Then drizzle with white chocolate that has been colored with food coloring. It makes a really pretty plate to gift when you add an assortment of all of the above. Now for the recipe for Seven Layer cookies. These are so yummy but very rich, so cut in small pieces.
Seven Layer Cookies
1 stick melted butter 1 cup graham cracker crumbs 1 can flaked coconut (or 1 cup) 1 6oz. Pkg. chocolate chips 1 6oz. Pkg. butterscotch chips 1 can sweetened condensed milk 1 cup chopped pecans
Melt butter in 9x13 dish. Add ingredients by layers as listed. Bake at 325 degrees for 30 minutes. Cool and cut into small squares.

I love holiday baking. Wanda - I have made those and I agree they are delicious and addictive. We have always called them Hello Dollies. My son made them once for an FFA baking contest and he won.
This Christmas my daughter and her family will be coming home - they haven't been able to for the last two years. We are all so excited. We've started our baking list and it's a long one!
We'll bake our traditional Swedish Saffron Rolls for Christmas Eve dinner.
Our cookie list includes lots of family favorites: Chewy Chocolate Gingerbread Jelly Cookies Whoopie Cookies Salted Caramel Chocolate Chip Cookies Spritz Pepparkakor Bourbon Balls My son-in-law's German sugar cookies
Can't wait!

Laura - what are the Pepparkakor cookies? And what makes the German sugar cookies different? My mother in law and I make her grandmas recipe for sugar cookies and they have nutmeg in them. They were German so I'm curious if the recipes are similar... |

Just catching up. I don't do alot of baking for the holidays anymore. But we make the family sugar cookie recipe. Wanda those cookies sound addictive but if they are rich I don't think it could eat many. We also make crockpot Christmas Crack candy and the family's fudge as well as my grandmother's brown bread recipe. I may have to give the oreos and pretzel dipping a try.

I looked on line for Crockpot Christmas Crack, there are many. Will someone share their recipe. I can not believe that I have never heard of it. I too will post a Christmas Cookie Favorite, going through my recipes now.

24 oz. white chocolate almond bark broken into pieces 12 oz. semi-sweet chocolate chips 12 oz. chocolate bark 5 cups salted dry roasted peanuts sprinkles optional
INSTRUCTIONS Spray inside of crockpot or insert a crockpot liner for easy cleanup. Line 2 baking sheets with silpat liners or wax paper and set aside. Place almond bark pieces on bottom of crockpot. Add peanuts, white and chocolate barks and chocolate chips. Place lid on crockpot and set on low for one hour. Remove lid and stir mixture to cover peanuts with chocolate mixture. If there are still chocolate pieces that haven’t melted, place lid back on and continue to cook. Stir every 15 minutes until all the chocolate is melted and can cover the peanuts. Using a cookie scoop or two tablespoons, scoop a heaping tablespoon of the candy mixture onto the lined baking sheets. Immediately add sprinkles and let set out until completely cooled and chocolate is set. Store in airtight container.

Pepparkakor are our family's Swedish ginger cookies. The original recipe came from my dad's grandmother.
1 cup butter 1 1/2 cup sugar 1 beaten egg 2 tbsp dark syrup 3 1/4 cup flour 1 tsp cardamon 2 tsp soda 1 tsp cinnamon 1 tsp ginger 1 tsp cloves
Cream butter and sugar; add beaten egg and syrup. Mix dry ingredients and add to butter mixture. Let dough stand in refrigerator overnight. Roll thin and cut in desired shapes (we traditionally do stars). A slivered almond can be placed in the center of each cookie. Bake at 375 degrees for 10-12 minutes.
My son-in-law's family makes these German Christmas Cookies - a recipe from his grandmother. 4 cups fine shifted flour 2 cups sugar 1/2 lbs butter 3 eggs 1/2 tsp cinnamon 1/2 tsp baking powder 1/2 grated lemon rind
Pick up butter and sugar with your fingers and work together. Mix dry ingredients. Mix in beaten eggs and flour mixture. Make into dough. It must stand overnight in a cool place. Roll thin and cut shapes. Oven: 375 8-10 minutes Cookies improve with age.
I always think it's fun to read the recipes as they were written in the past. When I used to rewrite them I would shorten or change the instructions to save space on my recipe cards. Now I cherish the handwriting and the language that was used.

Laura - thanks so much for the recipes! Those both sound delicious.
I make a lot of cookies at Christmas time. I put together plates of them for everyone we do business with plus friends and family. Everyone has a favorite that they wait all year for :) The funniest part is how many people hide the cookies from their spouses and kids so they don't have to share LOL! |

I’m just catching up after being gone for an extended Thanksgiving/80th birthday celebration for my father-in-law. I still do quite a bit of baking for Christmas. Coconut balls, sweet breads, cookies, fudge, all the things! One week from today, my niece, daughter and I are taking a Christmas cookie decorating class. I’m super excited to learn some things! :) |
