Does anyone have a really good recipe? I love making them but would love to try for different flavor.

Sounds great! We are like that with the mexican food at gatherings. I love how good food brings everyone together, dont you? Cant wait to try these!

Since you like cajun, here are some other varieties...

Boudin (cajun type of sausage) wrap
Remove boudin from casing and mix with more rice

Bayou Blend
Cooked shrimp, crawfish and crab with onions, garlic, bell pepper, creole seasoning, cheddar cheese

I know it takes a lot of prep time to mix and roll and then fry enough of these for a gathering. But, they're all so yummy.

Most of the time, I am standing at the deep fryer surrounded by by family/friends and handing the rolls out. They rarely make it to a serving plate.

The cajun ones sound real good. We have Mexican food alot so cajun would be a nice change.we ended up making some pork and veg egg rolls yesterday that are a little more spicey like my honey likes. We want to make more soon and will be trying your versions. Thanks!

I use egg roll wraps frequently for various meals. And, I don't just do oriental. You can fry them or brush with oil and bake them.

Tex Mex Chimicanga
cooked and seasoned ground beef, onions, garlic, celery, bell pepper, chili/taco seasoning, shredded cheddar cheese.

Southwest Wrap
cooked and seasoned shredded chicken, onions, garlic, bell pepper, drained corn, drained black beans, cumin, shredded colby-jack cheese.

Cajun Wrap
Cooked "dirty rice", drained red kidney beans, onions, garlic, bell pepper, creole seasoning, shredded cheddar and pepper jack
