The Christmas baking got started yesterday. I go to my moms house and we work together. Been doing that actually since 1996. My ma kept a list of cookies we made each year. The list has gotten smaller over the years, and most recent years we have just done 4 different types of cookies. Spritz, cut outs, peanut blossoms, and Mexican wedding cakes. We will do a few more things tomorrow, pecan tassies, and some simple candies. Next week I will bake a batch of hawaiian rolls to use when our kids come over. Happy Baking everyone.

Well last week I have baked a total of 5 dozen cookies, pinwheel, gingersnaps, oatmeal for church, a full-size marble sheet cake for a ministry that I do. Then I will start making the Spritz, gingersnaps, chocolate chip, snownballs and a few others. Happy Baking and Merry Christmas.

I won't be baking . . .with my Parkinson's I can hardly manage anything in the kitchen anymore.
We won't have any family coming over either.
Sooooo . . . there you have it.

In years past I baked about 15 kinds of cookies along with fruit cake, divinity, and fudge. Now with everyone’s various diets and families scattered everywhere I spend the time on the road from Texas to California accompanying my husband home from his annual hunting trip. Tonight we are in Nevada and it looks like we will be home for Christmas this year.

I've got my candy done that I do every year for about 25 years. My mail lady loves them, I packed most all of them up.
Texas Haystacks, shoestring potato sticks and honey roasted peanuts mixed with melted chocolate almond bark and Reeces Peanut butter baking chips. So easy and makes a lot.
Peanut butter truffles dipped in white chocolate bark. Middle is 1 can of eagle brand milk condensed milk, 4 cups powderer sugar, 1 cup of crunchy peanut butter.
Mix middle, refrigerate for 2 hours, dip in melted chocolate. I put in the tiny cupcake papers, less mess. both these are sooo easy and makes more than 50 pieces.
I've got my sugar cookie dough chilling, lily June will be here in a little while and we will do snowman and mittens. High of 75 Christmas Eve and Christmas day so no snow for us.
A lady from Texas gave me the recipe, the haystacks we had eaten at work had Chinese noodles. We liked them much better with the shoestring potato sticks.

Looks yummy Connie Sue! I like that you use potato sticks instead of the Chinese crunchy noodles.

Wanda Sue, they also liked the honey roasted peanuts better, I used just regular roasted once because the store was out and they didn't like it. I think that's just personal taste, they were just so used to the honey roasted .

I just made Ginger Snaps for the first time. They turned out pretty good. Not sure what’s next. I am resting now:-)
