Hi Everyone
I made refrigerator veggies today. I watched a FB video and it looked real easy.
I made spicy carrots, regular carrots and two jars of pickled red onions. I also made dill pickles and Dilly beans.

I have not done this afore. I hope they come out ok.

They look really yummy! How long do they sit in the fridge?

Per the video about 3 to 4 days. The red onions can be eaten after a few hours. I planned to wait the three days.

I'm curious how you like the red onions - those sound like they'd be great on burgers!

Hi April,
I read they can be refrigerated for up to 3 months. (even after opened)

Hi Heather,
I will have to let you know in 2 days but I agree. They should be good on a burger.

Those look lovely Nancy!
I've done the pickled onions and they are so versatile!
I think as long as they have a vinegar base they should last in the fridge for months.

I was just thinking I should put a card in the mail and see how she's doing. It has been quite a while. Hope everything is OK.

I sent an email and she responded that her season with MJF is over. She will be missed.

I made 2 batches of strawberry jam - one is the way I usually do it and the other is with MaryJane's chillover powder. All jars have sealed :)

Hay there,

The garden is growing and producing tons of beans and potatoes. Tomatoes are not turning red fast enough for all my tomato sandwiches but they are delicious. I've been making pickles for the last 3 days. We ending up with 36 pints of spears, some dill but most are spicy garlic. I'm thinking of canning potatoes. Do any of ya'll do that? Hugs

Way to go Daizy! I can potatoes. Love to have them on hand.

Yesterday I canned 13 pints of green beans. Today it's pickles.

The garden produce is starting to come in around the country. Enjoy the goodness. I will head out shortly and check on my peas. I hope to get enough to freeze this year. Everything else grew like crazy since we have warmed up now. The heat is awful, in my opinion. the corn is tassleing out though.
Happy Canning!

The box of peaches I got from our farmers market is ready to use. I'll be freezing and dehydrating them.
