I was gifted with some pears and finally found a recipe that I was searching for!
I found it here: http://chickensintheroad.com/farm-bell-recipes/pear-honey/
Pear Honey
Delicious as a topping for ice cream, cakes, eat on toast like jam or jelly, etc.
Difficulty: Easy
1 qt. pears 1 (20 oz.) can crushed pineapple 6 c. sugar 1 T. lemon juice 1/3 c. water 1 (14 oz.) bag shredded coconut (optional) Directions
Peel pears and remove seeds. Chop pears in a food processor until very fine. Mix with lemon juice and 1/3 c. water. Cook in heavy saucepan until pears are very tender. Add coconut if desired, pineapple and sugar. Stir often, will stick easily. Cook until pear honey is thick. Pour into hot, sterilized jars. Adjust lids and bands. Process in hot water bath for 10 minutes.
Enjoy!

Sounds so very yummy!! Does it matter which pears are used? I have never preserved pears before.. Thanks for sharing Sharon!

Teresa,
I couldn't even tell you what variety I used. They were from a neighbor's tree and were greenish-yellow. I don't see why you couldn't use other varieties :)
