I just picked some fresh lettuce greens from my garden. Had a delightful salad with orange segments and scliced grapes with a strawberry puree vinegarette dressing. I love getting fresh produce in November. One of the advantages of living in the Panhandle of Florida. Next to harvest, I hope, is brocoli and eggplant. I'll keep my fingers crossed to "keep picking" until the first freeze.
Any ideas on what to do with eggplant?

I'm jealous...just moved and now I'm starting from scratch again....just once I'd like to buy a house that the previous owners had gardened. It never seems to work out that way....
I suggest making ratatoiulle...and then also watching the movie Ratatoiulle..it's so cute!!!!

I love eggplants. Our first eggplants did an excellent job. There are two different kinds of eggplants the round and fat one and the skinny and long one. The fat one we make eggplant Parmesan. The skinny one I saute and and use different types of marinating sauce...with onions and garlic.
You will definitely enjoy watching the eggplants. I never planted broccoli so I can't share with you my experience. |

| I was never a fan of eggplant. But my boyfriends sister planted some and we decided to harvest a few. I looked through my recipe books and couldn't find anything that sounded interesting so I decided to wing it with what I had. We had also picked some zucchini, crooknecks and scallop from our garden and I had some chicken in the freezer. So I cut everything up and made stir fry. It actually came out pretty good, the eggplant reminded me a little of mushrooms. |

Hello Deb, welcome. I'm new here myself. I'm very envious of your winter garden. How great is that?!! I have been able to grow a little spinach in a cold frame here this winter, but we have temps in the single digits at night, so no oranges, obviously. I live in S. Oregon in the high desert. We live off-grid and my husband operates a solar powered wood-shop and I have a solar-powered sewing loft here. Enjoy your new friends. There are some wonderful gals here and lots of great ideas and inspiration!
