CJ, hope your day is better tomorrow! That's how I felt when it was such a horrid, humid heatwave a few weeks ago (heat index of 110 in New England)?

Last night I had my Sisterhood chapter over, so for dinner, we just had quick meatball sandwiches my dh had picked up from a new restaurant (my first. ever. not sure I will ever have one again). But, for my sisterhood farmgirls I made the best dessert! Raspberry-Blackberry cobbler from berries I picked that afternoon. Served with vanilla ice cream. It was divine. Not a drop left.

Tonight I made a yummy MJF Bakeover. I used organic beef, tomatoes, baby kale, spinach and chard, corn, cheddar and garbanzo beans, seasoned with chile powder, cumin, seasalt and garlic. Delish!

It's rainy today. Going to make a big pork roast in the oven smothered in fresh herbs from the garden. Love the aroma of the garlic and rosemary, oregano, and basil baking! Will make a side of homemade Greek macaroni and cheese and steamed broccoli.

Maybe will make some homemade rolls. Will see.

Trying to spend as much time as possible with DD before she goes back to school, so I have been making some quick dinners. Last night was a really good grilled chicken salad with lots of garden goodies. It had romaine, garbanzo beans, chicken, corn, feta cheese, two kinds of tomatoes, herbs, all tossed in olive oil, lime juice and Bragg Liquid Aminos. On the side we had organic creamy broccoli soup. It was a great summer dinner.

Tonight we are grilling a steak and making steamed broccoli and oven potatoes made from blue potatoes we got from an organic farm stand in Kent, CT. I just love this time of year with all the fresh veggies!

Sharon, your dinner sounds delish! Will be checking out that recipe! I love the pioneer woman recipes. Her books are awesome. I don't have any myself (yet) but my dad's wife has almost all of them and when I visit her, she always makes yummy stuff from them.

Tonight I made some steamed veggies, a little pasta, and some chicken sausage and peppers. (I accidentally sorta burned them because I was outside doing a little planting while dd rode her bike...oops!) :)

I keep missing some days but it is because I am spending every minute I can with dd before school starts. We have been going to the beach, bike riding, and just being together.

Last night we had burgers. My dh made them on the grill with some mesquite wood in the smoker. They were so good.

Tonight I am making squash casserole from the GIANT squash I picked out of my garden. I won't need more than one for the whole casserole, hee hee. Not sure what else yet. I'm making strawberry jam in a few minutes, so maybe for dessert I'll surprise dh with some Danish Aebiskiver (pancake-type puffs). (In Denmark it is eaten with strawberry jam).

Hello everyone :)

Nicole, I have not had the privilege of trying Aebskivers but have always wanted to. And I LOVE Strawberry Jam, my all-time favorite :)

I am thinking of making a quiche with salad tonight. I found a really good recipe for a crustless quiche (which would I guess be like a fritatta) using Kale and whatever you like. I am also making homemade Creamsicles today, that can be dessert.

It's so rainy and damp today... I'm going to make your maple pork loin tonight, Sharon! Ever since you shared the recipe, it's been my all-time favorite! You're such an awesome cook!! Thank you!

Nicole, I've never heard of Aebskivers before, but they sure do sound yummy! Will you please share your recipe when you have time? I'd love to try them!

Hi girls!

Everyone's dinner sounds delish! I wanted to get some Kale at the Farmer's Market this week but it wasn't looking so good...

Our dinner was great! I pan seared organic chicken breast in coconut oil with tarragon, fresh garlic, seasalt, and chopped olives, with a side of garbanzo bean salad with homegrown tomatoes, cukes, mint and basil, and squash casserole.

CJ- taco salad is an awesome idea!

Was at the beach Thursday, the zoo yesterday, hosted a sleepover last night and took my dd to the Sandy Hook for two hours today. Im thinking I will be nominated for Mom of the Year, LOL. I'm also working on laundry, did some weeding, and housekeeping today. I'm dog tired so its sandwiches tonight. Hummus on bread with greens, tomatoes, and cucumbers. Need a night off, LOL! What's in your kitchen this evening?

Hi ladies.
I have been reading the past few pages of this thread and notice there are so many yummy looking meals everyone is preparing. I am so bored with what I make I can't stand it anymore.
So I am going to try the Rosemary Balamic chicken for dinner tonight.
I have it in my solar oven so we shall see if the sun stays out long enough to cook it. I can't wait to taste this chicken. If the sun goes in I will just have to pop it in the gas oven to finish it so no worries.

I noticed someone had mentioned a garbonzo salad....does anyone know if that recipe had been posted and what page it might be on? Thanks in advance.
I am going to keep an eye on these postings and also try and go back and read from the start. Thanks for all the inspiration I am in serious need of it.

OMG I just made my 1000 post!!! I didn't even realize it until I reread what I had written.

This post is inspiring, I get alot of good ideas here too :)

Tonight we are having a super fattening meal ;)

~Grilled Bratwurst on Homemade Buns with Sauerkraut and Banana Pepper Mustard.(We slice the Brats lengthwise but not all the way through, stuff with jalapeno slivers and wrap with bacon secured with toothpicks and then grill, yum!)
~Salad with fresh lettuce a friend blessed us with :)

Nicole I was back on one of the newer pages and noticed the recipe for the Chicken Broccoli Casserole. I tried doing a search for it and could not find it. Could you please post the recipe or the place I could find it. I would be so grateful. Its sounds super delic. Thanks.

I have no idea what's for dinner tonight as hubby and I have not talked about it. He does most of the cooking and I LOVE, LOVE, LOVE him for it He's very good at it, too!!!

Last night we had homegrown green beans, Baja chipotle tilapia filets and baked spud . . it was very tasty!
