I love soup better than anything but it's too hot for me to even think about soup. I'm having fresh corn on the cob and fresh mustard greens---also potato salad made with freshly dug potatoes. It's a garden food day.

Last night, I made chicken breast sautéed in olive oil with veggie broth and white wine, with capers. On the side was taboule salad. We have not eaten that in so long! I make mine with fresh cucumber and tomatoes from the garden, with lemon juice and fresh mint. Ate the rest for lunch, got in trouble with dd since I did not leave her any, (giggle). Baked homemade chocolate chip cookies with dark choc chips for dessert, left her some of those so I am redeemed.

Tonight I am making beef stew. It is a bit grey with a chill to the air.

Nicole your dinners sound so yummy. I haven't had taboule in years. Will have to make it soon.

Nibbling my way through the day. Not in the mood to cook. Did finish putting up pear butter this morning so it'll be on the menu later in the week.

Corn, corn, and more corn is what we have been eating. I can never get enough of fresh corn. So far just one racoon here and he hasn't been in the corn. We are stuffing it full of cat food each night---letting it have all it wants. Hopefully it will stay out of the patch until I can get it in the freezer.

Tonight we are having a new recipe: Garlic Honey Chicken breasts. Looks good, made in the skillet. On the side, blue potatoes roasted in the oven, a fresh green salad with blueberry basil dressing, and for dessert, berry cobbler.

I am currently canning dill pickles. ;)

My chicken breasts turned out delish! They made a ton! The next night, we had the rest of them, and I made home fries in the skillet from the leftover potatoes. On the side, homemade pancakes with decaf coffee. MMMMMMM good!

Last night, I made boneless ribs on the grill with a side of homemade pasta salad, made with mayo, dill, homemade pickles, carrots, and tomatoes from the garden. It was Heavenly!

Tonight, I am thinking crock pot chili with pumpkin - a nod to fall.

Sara, another mouth water meal!

This week I made a chicken broccoli casserole. We ate it two nights. Tonight, it is Greek spaghetti and salad. Pumpkin bread for dessert.

So, I have been busy being sneaky as Saturday was the surprise birthday party I threw for my dh. We have been “munching” on the leftovers since. Tonight I will come up with something new. Maybe chicken, as we just finished the 1000 Danish meatballs I made for the party. Danish meatballs are different: 1 pound ground pork to 2 pounds beef, 1 cup milk, 1 cup bread crumbs, then seasoned with allspice, nutmeg and cloves.

For the cucumber salad, I really liked this recipe: for every 3 cukes, washed and peeled, cut into “coins” add a Tsp of salt and let sit 15 minutes. Drain. Then add a cup of white vinegar, one cup water, season to taste with salt and pepper and 1 tsp. Of sugar. Let sit at least an hour. So good...even several days later.

It's still hot here in my part of Texas - hi of 91 today - but I'm hungry for chili so my easy as pie chili it is. Out of the freezer pre-cooked and chili seasoned ground chuck. Two jars of home canned dried black beans; 1 chopped onion; masa; garlic powder; more chili powder; tomato paste; store can diced tomatoes; and home canned corncob broth. Simmer for an hour or so.

Sara---how in the world can you eat chili in the heat of Texas and I can't stand the thought of it in The heat of WV. Girl---you do have nerve--- and I can't wait to cook chili. But I am super hot and not amused by chili---LOL. Love you Sara and always read your posts.

Barbara it's easy - just crank the A/C down. We eat Tex-Mex year round. If your enchiladas have chili on them that's Texas style. If they have tomato or green sauce that's Mexican style. BTW I read your post too.

I thought about chili, too, though it is still unusually hot for Connecticut. I made beans and rice - with onion, Rotel, rice, beans, and green peppers. Will have a nice hot lunch today.

Help girls. I am not in the mood to cook tonight. Need inspiration!

Yellow Rose---I don't have air conditioning and so happy that you do! So hot and no chili for me---although hubbie can't wait for chili, But none for us until it cools down. When it is hot in WV==it is truly hot! Bless you Sara because you are a true wonderful person. Rock on. I guess I was born on hillbilly food---summer veggies and cornbread---we just ate what was in season---a thing I think we should all do. Sara---you are so cool and one of a kind. Haven't decided what's on the menu for today except for one thing - apple pie with caramel apple walnut sauce. Apple Pie Sunday the one day of the year I bake a pie. This FarmGirl is not a baker. I don't like all the exact measuring - I prefer the handful of this and pinch of that method.

Had a craving for beets. Cooked them in my express cooker. Saute'd the greens in olive oil with garlic powder, red pepper flakes and a spritz of lemon juice. Ate the greens for lunch and made an almond coconut milk smoothie with a banana and peaches. Yummy!

Nancy---I really love beets! so good with sour cream. I have been cooking very little due to heat and no water. But tonight Hubby went out and found a few cherry tomatoes and green peppers in our parched garden. The heat is to go away and this is our last summer cook-out with the dogs. Can hardly wait to eat those tomatoes. Hot dogs too and plenty of treats for the dogs. Life is good in the holler---and this water shortage has shown us we can handle what comes.
