I just fixed two fried eggs in my cast iron skillet. Egg # 1 was from a factory farm. The yolk was pale and runny. Egg #2 was from a free range chicken. The yolk was bright orange and stayed firm. Guess which egg tasted the best? I'll never buy factory eggs again. Cindy

exactly I've always noticed the color difference. Also the flavor, to me the farm ones taste rich and buttery, I never understood why people would salt their eggs! Then I tasted store bought and figured it out. The store bought ones are tasteless!

I typically buy fresh, eggs from one of my neighbors . . yummmm! They are soooooo good!
Our nearest neighbors also have chickens and they GIVE us an 18-egg carton full every now and then. They are all gone this weekend and recruited my hubby to take care of their chickens and their dogs. Told him he could HAVE the eggs. So in 4 days he has brought home almost 3 dozen FRESH eggs. This morning he made the BEST scrambled eggs! YAY! CJ

I get so fascinated by yolk color- even though we raise our own chickens.
On the winter when laying decreases...and for baking ONLY I'll buy store bought pasture raised hen eggs. Even those yolks can't compare to the ones we raise.
Pity I have an egg allergy and cannot eat eggs in the raw like fresh off the skillet. |
