they are Meringues. Made in a very very cool oven using egg whites and sugar, then filled with cream :)

Meringues are one of my favorites but mine sometimes get gummy, I think because of our humidity. Could you share your recipe. I've never filled mine with cream but have dipped them in chocolate. Thanks, Kathy |

Yes of course . I'd be delighted to share my recipe. Please keep in mind I use English ingredients, but I think I know the American alternative.
Ingredients 4 Large egg whites. 4 oz of Granulated Sugar ( I think the American version is the same ) 4 oz of Castor/Confectioner Sugar ( I think the confectioner sugar is the correct alternative. Method Whisk the egg whites until they form soft peaks. Sieve the Granulated sugar then whisk in, carefully and only whisk until in is thoroughly mixed. Sieve the Castor/Confectioners sugar in, the gently fold in with a spoon, only enough until again is is thoroughly mixed. Spoon onto prepared, greased baking paper covered baking sheets.
Cook in a very very cool oven for at lease an hour. Lift one to test and tap the base after this, if it sounds hollow, they are ready. If you like you're meringues bone dry though out then leave them for longer.

To finish, fill will whipped heavy cream and sandwich together in pairs.

When you say 4oz of each sugar is that by weight? Do you whisk this by hand or with an electric mixer? Thanks again Kathy |

Yes, it is by weight. And i always use an electric mixer It can be done by hand, but to get the egg whites to form soft peaks takes forever this way.
Capacity Weight 1/5 teaspoon 1 milliliter 1 oz 28 grams
( i googled it, this maybe helpful )
