My family recently butchered a pig that we raised. Now we have a freezer full of pork! I'm looking for your favorite pork recipes.

I just picked up a whole hog from our butcher too. I would love some good recipes too. I am trying to bbq a shoulder roast in my sun oven today but its getting kinda cloudy so may have to finish up in the house. I am just using some spices and sweet baby ray bbq sauce.

We just butchered our first hog too! Here are some of our favorite pork recipes:

Maple-Curry Pork Roast

1 ˝ pound pork tenderloin
˝ cup pure Maple Syrup
2 Tablespoons each: Soy Sauce & Ketchup
1-Tablespoon Dijon Mustard
1 ˝ teaspoon each: Curry Powder & Ground Coriander
1 teaspoon Worcestershire Sauce
2 Cloves garlic, minced


Trim pork of all visible fat. Place pork in a large, heavy-duty resealable plastic bag. Whisk together all remaining ingredients in a medium bowl. Pour over pork in bag. Seal bag and allow pork to marinate in refrigerator at least one hour.

Transfer pork and marinade to a small roasting pan or baking dish. Roast, uncovered, at 350 degrees for 40 minutes. Pork should be slightly pink in the middle.

Let pork stand for 10 minutes before slicing. Slice thinly. Drizzle extra sauce over pork and serve immediately.

Yield: 6 Servings

Pork and Plum Kabobs

1/4 cup Raspberry Vinegar
1 Tablespoon Ground Coriander
1 Tablespoon Dark Brown Sugar
1 Tablespoon Olive Oil
1 Tablespoon Grated Onion
1 1/2 teaspoons of salt
1/2 teaspoon Ground Black Pepper
1/8 teaspoon Ground Cloves
2 pounds Boneless Pork Loin cut into 1 1/2 inch chunks
5 Medium Plums cut into quarters
1/4 cup Plum Jam

Combine in a Ziploc bag, vinegar, coriander, brown sugar, olive oil, onion, salt, pepper and cloves. Add pork chunks, turning to coat. Seal bag, pressing out as much air as possible. Place bag on plate and refrigerate pork 1 hour to marinate, turning once.

On skewers (5-6) alternately thread pork chunks and plum quarters. Place skewers on grill over medium heat; cook 15-20 minutes, until pork loses it's pink color throughout, turning occasionally and brushing pork and plums with plum jam during last 3 minutes of cooking. Enjoy!

Baked Pork in Plum Sauce

1 jar / half a cup of plum jar
2 tablespoons of white wine vinegar
2 tablespoons of Worcestershire sauce
1 plump clove of garlic - minced or crushed
Three large springs of fresh rosemary
1 teaspoon of beef gravy granules
Enough free range pork chops to feed four.

Make up the marinade using all of the ingredients above. Roll the cuts of pork in the marinade, cover and leave in the fridge for half a day at least but overnight if you can bear it.
Bake slowly in the oven at about 240°F/120°c for 3 hours before turning the oven up at the end to 400f/ 200c for the last thirty minutes
Take the meat from the baking dish and place to one side keeping it warm.
Pour the juices from the baking dish in to a hot pan on the stove and add one teaspoon of beef gravy granules or one teaspoon of flour to thicken.
Pour in to a gravy boat.

Sharon thanks for the recipes. They look absolutely wonderful!!! I can't wait to try one. its too late tonight and I need to get plum jelly. I wonder if blackberry jelly would be too strong? I will have to see if our store even carries plum jelly. I hope they do.

Lisa, hmmmm, what time?

Linda, I'm thinking that the Blackberry might be. When I didn't have my own jars I have used the Bonne Maman jams and jellies. If I couldn't find plum I used Sour Cherry and that was equally as good. I bet Peach would be great with the Kabobs :)
