Yesterday I made chevre - it was a long, but easy process. What is everyone using for molds for soft cheese and are you using cheesecloth or muslin? Do you reuse yours? Do you wash it in regular detergent? Any help would be appreciated.

I use actual cheesecloth that you order from a cheese supply store. I wash it in dish water, then sometimes soak in bleach water. I ordered chevre molds from a cheese supply store as well.

Thanks, Michele. I ordered cheese cloth this morning. I have two molds for soft cheeses but they were hard to line and one batch drained better than the other - perhaps the new cloth will remedy that. Every batch is a learning process - but the taste of the cheese was wonderful.
