I watch Martha Stewart on Sat. on PBS Channel 13 out of Dallas. Today her show was all about corn. The recipe that got my attention was corn cob stock. She recommended it for corn chowder & tortilla soup. I would add it would be good in cornbread & vegetable soup too.

Corn Cob Stock

5 corn cobs with kernels removed
1 large white onion
8 cups water

Cook at medium boil for 45 min.
Strain - will keep in fridge up to 4 days - freeze for 3 months

Martha has some great ideas and I recently heard about saving the cobs for this same purpose. I bet it makes a delicious stock base for a lot of great soups and dishes too. Are you planning on trying out this recipe? If so, let us know what you think!

Oh shoot! I wish I had that recipe last weekend! I shucked and froze about 10 doz ears!
Oh well, the chickens had some good snacks.

I'm with you Lisa, I finished my 100 or so ears 2 weeks ago. Our compost pile had a good snack :)

I would add maybe carrots and celery to the boiling process and then strain----makes for a better flavor. MB

Sharon & Lisa I'm sorry Martha was a week late but one thing us farm gals know - there's always next year and another crop.

Winnie, I bought 6 ears of corn today. Will make it tomorrow. I no longer can eat corn so it will go to my sister, Bobbie and the husks to compost.

Marybeth good idea on adding carrots & celery. I had thought about adding garlic. I tend to add garlic to everything I can. Planning on using some of the stock for potato soup. Been hungry for a bowl of potato soup.

I have corn on the grill right now. Do you think it would taste ok if I made it out of cobs from grilled corn? I think I'll try it. It's such a good idea! Sara I'm with you on the garlic too. I add garlic to anything I can. Also potato soup is pretty much heaven in a bowl. I'm Irish though... not surprising I would think that.

Erin, grilled corn cob stock should taste good in a lot of dishes. If it dries out on the grill wouldn't you think it would only intensify the flavor. One thing for sure it won't cost anything to find out - a little water, garlic, and your time.

Did someone say potato soup!!! Oh my it is so delicious:):):) I love to make home made vegetable beef soup with all the fresh veggies I can...and I do love corn in my vegetable soup!!! Will have to try your idea Sara...sounds good...

Got up at 3:30 this morning and made corn cob broth. I had prepared the cobs the night before. Changed the recipe a little - 6 cobs instead of 5 - added 6 cloves of garlic & 1 lg. rib of celery to the call for 1 onion. Turned out really good.

Made small pot of potato soup with some of it which I will have for breakfast. Rest of it I will freeze in zip lock bags.

I want to make one more batch to freeze. I only have refrigerator freezer so I can't get too carried away.

Question for you canners. If I wanted to try canning some for the winter would it have to be done in a pressure canner? If so my sister, Betty, has one and I could do it at her house.

Sara, it would definitely need to be pressure canned, and I know of all veggies, corn has to be pressure canned the longest, so I'm not sure what time to tell you. It wouldn't have the density of whole corn, but I would not risk anything but a pressure canner for that.

I have made several batches of corn cob stock and the last time I cooked it down to bouillon. Before it reached the bouillon stage I used some if it in cornbread instead of milk. Added Monterey Jack Cheese & green chilies. I really liked the way it turned out. Good texture & more of a corn taste.
