In my 1952 Kerr Canning Book is a recipe for canning walnuts or pecans in the oven. This is the first time I have ever read anything about canning in the oven.

Recipe: Put nut meats into clean jars. Put on cap, screwing the band tight. Process in oven. Use lowest possible heat, 225 degrees, for 45 minutes any size jar.

That's all the info given. Doesn't say how long the nuts will keep. I looked in my Ball Blue Book and no mention of canning nuts.

Have any of you ever canned anything in the oven?

Hay there,

Now days they don't recommend the oven way of canning ... or the dishwasher way, for that matter. But my 93 yr old neighbor heard I was canning tomatoes and told me to freeze them ONLY. So who knows.....call your
Ball Mfg. hotline or food administration or perhaps the county extension service. (I am continuing to can my tomatoes....water bath style.. last years were delish.)

Oven canning is no longer considered safe. Nut meats (pecans,walnuts) are easy to can and I use the following directions which are in "So Easy to Preserve" published by the Cooperative Service, University of Georgia:
Hot Pack dry - shell nuts - spread in single layer on baking pans and place in a 250degreeF oven. Stir occasionally, heating only until nut meats are dry but not browned. Watch carefully that they don't scorch. Pack hot nuts into hot jars(make sure jars are hot and dry) leaving 1/2 inch headspace. Wipe jar rims, adjust lids and process (lids also need to be hot and dry).
Pints or quarts 30 minutes in a water bath with water 1 to 2 inches below the top of jars or
pressure canner at 5 pounds pressure for 10 minutes (pints or quarts)
High altitude - water bath 35 minutes at 1001-3000 feet - pressure canner 10 pounds pressure for 10 minutes
40 minutes 3001-6000 feet, pressure canner 10 pounds pressure for 10 minutes
45 minutes over 6000 feet, pressure canner 10 pounds pressure for 10 minutes
