DH had knee surgery last week. So I am babying him by baking him his favorite pie. Coconut pie from scratch with farm fresh eggs. So good. Pie filling cooked in the micro wave. So easy.

Here is the recipe for my husband's favorite pie.

Coconut Pie
1 baked pie shell
1 cup plus 1/2 cup of sugar
1/3 cup of flour
Spec of salt
3 egg yolks beaten ( save whites for meringue)
2 cups plus 1/2 cup of milk.
1 cup plus 1/2 cup coconut
Mix dry ingredients. Mix yolks and milk together and pour into dry ingredients. Mix well. Put in glass bowl to accommodate all ingredients. Add 1 cup of coconut.
Stir well.
Microwave high for 4 minutes. Whisk. Microwave on high for 4 minutes. Whisk. Microwave high for about 3 minutes until mixture is thick. Cool about 5 minutes.
Add to pie crust.

Meringue
3 egg whites
1/2 teaspoon vanilla
6 tablespoons sugar.
In small mixer bowl beat the egg whites and vanilla at medium speed about one minute or till soft peaks form.
Gradually add the sugar, about one tablespoon at a time beating at high speed of electric mixer for about 4 minutes more or till mixture forms stiff, glossy peaks and sugar is completely dissolved. Immediately spread meringue over pie, carefully sealing to edge of pastry to prevent shrinkage. Sprinkle the rest of the coconut 1/2 cup over meringue. Sprinkle sugar over top. Bake 350* for about 10 minutes or until meringue is slightly brown. May need to tur pie around in oven for even browning.
Allow to cool down on counter for about two hours. Refrigerate after that.

CHOCOLATE PIE
Same directions as above except skip the coconut and add 3 tablespoons of cocoa to pie dry ingredients.
Enjoy.
