Seems like I am always drying something and have developed ways of doing it. I would like to share my tips, as I think of them, with you and you share your tips with us.

Today I am drying eggplants. I started a couple of days ago when I juiced two large lemons for the dipping solution. The dipping solution I use calls for two cups of water, heaping Tsp salt, Tsp lemon juice.

Because I deal with MS fatigue I try to break up the work as much as possible. Last night I washed, air dried the eggplants, and covered with clean kitchen towel, so they were ready this morning. Also put wax paper liners in de-hydrator so it's ready to go.

I use a 4-cup measuring cup so I only have one thing to wash, and it's big enough to dip any way I slice the eggplant; some are cut lengthwise, others into rounds and really big ones into chucks.

Not only do I dip the eggplants but also the peeling. I keep the dipped peelings in a Ziploc bag in the fridge until all eggplants are dried than I dry the peelings. After they are dried I put them in the blender to make a powder for seasoning.

I have read that dried eggplants will absorb moisture if not in an air-tight container, so I divide it up and wrap in Press n/ Seal before putting in either a mason jar or Ziploc freezer bag. I can see how one of those vacuum sealers would be just the thing to use. May have to add one to my kitchen wish list.

This is interesting! I love eggplant but have never tried to dry it before.
