I am proud to say that it has been more than a year since I served my family a boxed dinner like hamburger helper.

Before being a farmgirl gave me the confidence to break that habit, I usually served it once a week. I was making such a big mistake even though I thought I was making good use of my grocery dollars.

I've learned to re-work our leftovers to make quick meals that are so much more nutritious - I have been making soups and casseroles. The greatest thing I have learned is that I can make tasty food that my family will eat without having to follow a recipe exactly...this is huge for me. I did not leave my childhood home knowing how to cook but I can confidently say that I am a good home cook now!

I so appreciate all that you fellow farmgirls have taught me both directly and indirectly about real food and eating fresher, closer to the farm foods. You have really helped me so much. Thank you!

Last week, I posted on my blog on making homemade soup. This week, I've outlined the basics of making a casserole. I hope it helps another farmgirl have the confidence to create your own recipes.

I enjoyed your blog post. I live alone, so I often fall into the habit of making boxed and frozen dinners. When I do cook, I always have a lot of leftovers. This has given me some ideas. Thanks :)

Star, this is one of our favorites. I love it because it doesn't contain any processed ingredients.

Beef Lombardi

1 lb ground beef
1 (14 1/2 oz) can chopped tomatoes
1 can of Rotel (I just use another can of diced tomatoes and add some green chilis to it)
2 tsp. sugar
2 tsp. salt
1/4 tsp. pepper
1 (6 oz) can of tomato paste
1 (6 oz) bag of egg noodles
1 cup sour cream
1 cup cheddar cheese grated
1 cup parmesan cheese grated
1 cup mozzarella cheese grated

Cook hamburger meat in a large skillet, Stir in chopped tomatoes and next 5 ingredients. Cook 5 min. simmer 30 min. cook egg noodles and drain Stir egg noodles and sour cream together. Place noodle mixture in bottom of lightly greased 13x9 inch baking dish. Top with beef mixture. Sprinkle cheeses on top. Bake cover with foil at 350 for 30 minutes. Uncover and bake 5 more min.
