Hi girls! Happy New Year!
Over in the “What’s for Dinner Tonight?” strain by our dear sister Nicole aka texdane, http://www.maryjanesfarm.org/snitz/topic.asp?TOPIC_ID=55647 , I mentioned yesterday what a wonderful pot luck we farmgirls would share if we all lived closer together. Don’t you agree? That got me thinking: What’s stopping us? Why couldn’t we just share our favorite recipes throughout the upcoming year as if we’re having that pot luck right here on MJF!
Therefore, I am proposing just that!
Throughout the year as we make, create and are introduced to delicious recipes, let’s share! ANY KIND OF RECIPE YOU'D LIKE! Simply tell us about your favorite recipes as you make them, how you came about it, and share how to make it! Then we can all take the recipe “home” and make it for our families and friends to enjoy! What do you think? I’m DEFINITELY in!!!
To start us off, here is one of my favorite pot luck desserts that I bring with me to almost every event. It’s always a big hit, and even requested by some of the older men at church!
STRAWBERRY TRIFLE
What you'll need:
A HUGE bowl
2 quarts strawberries, washed, stems removed, crushed with sugar to taste and left to sit until sugars melt into a syrup.
2 large packages of vanilla pudding (cooking kind, NOT instant!), mixed together with only 3 – 3 1/2 cups of milk (depending upon how thick you like it), cooked until thickened and bubbly. Set aside to cool, but you want it to still be hot.
2 Sarah Lee pound cakes, sliced into one-half inch thick slices
1 LARGE tub of Cool Whip Whipped Topping, thawed
DIRECTIONS:
Swirl a spoonful of warm vanilla pudding in the bottom of your huge bowl.
On top, layer sliced pound cake. The pound cake does not have to touch, but I do like to get it as close together as possible.
Layer strawberries on top.
Add a layer of whipped topping.
Repeat the layers as follows: warm vanilla pudding, pound cake, strawberries and whipped topping until you finish with a final layer of whipped topping.
Place one very large, red, ripe strawberry in the middle of the trifle for decoration.
Refrigerate for several hours or overnight until firm.
Serve chilled.
Will keep for a few days if there are leftovers, but we rarely have leftovers. :)
Notes:
This recipe CAN be cut in half, if you prefer, or even doubled, if you have a bowl big enough! :)
You can substitute homemade vanilla pudding and pound cake, if you prefer, as I often do.

For a different twist, you can make this recipe substituting sliced bananas for the strawberries and adding a sprinkling of either crushed vanilla wafers or crushed graham crackers along with the pound cake. Sprinkle a little bit of the cookie or graham crumbs on top of the final layer of whipped topping as decoration.

Nini, this will be a fun topic for sure. Your strawberry trifle sounds delicious.
Years ago on the day of a funeral, I was called upon to take food to the church for the family dinner after the service. More of the family had showed up than was expected.
I didn't have time to shop, so I turned to my pantry and this is what I came up with; it was all eaten and is always a hit when I take it somewhere.
English Pea Potato Casserole
No exact measurements since it can be made to fit any casserole dish.
Frozen English Peas Instant Potatoes Grated Cheese
White Sauce Butter - Flour - Milk - Salt & Pepper
Prepare the white sauce and add the frozen peas. Peas do not have to be defrosted.
Prepare instant potatoes per directions
Layer peas into buttered casserole dish Cover peas with potatoes Top with grated cheese
Cook in 350 degree oven until the cheese is melted & lightly brown

Great idea!
I'm definitely making Nini's Strawberry Trifle and Sara's English Pea Potatoe Casserole. (yes, I spell potatoe with an 'e') Who know's...this could turn into a cookbook one day.
My go-to item for potlucks is Black Bean Salsa. I like to use my own canned black beans but store bought work just fine.
In a big bowl, combine: 2 cans black beans, drained (approx 15oz cans) 1 large yellow onion, chopped (red onion can be substituted) 4-6 Roma tomatoes, chopped 1/2 bunch cilantro, chopped fresh or jarred jalapenos to your taste, chopped Juice from 1 lemon large pinch of salt 1/4-1/2 tsp black pepper
Serve with tortilla chips
For a southwest flare, add drained corn and 1/2 tsp cumin

This is a fabulous idea! Can't wait to follow this thread. It'll be like a moving feast and a good way to "visit" in the homes, churches, schoolyards, and backyards of farmgirls.
Here's what we had yesterday that my granddaughter invented. It was delish. I shredded our homemade Cheddar on top of a cookie sheet covered in organic corn chips (we like the Que Pasa brand), popped it in a 350 oven until the cheese melted. In the meantime, I added hot water to a bag of our organic instant black beans. When the beans were done (5 minutes), we added two big dollups of salsa and 1/2 cup grated cheddar and served it as a side dip to the chips. The girls were wild about it. So easy.

Wonderful idea. I just love recipes and these all sound yummy. I like making my Pinto Beans: 1 small pkg. dried pinto beans rinsed and soaked overnight 1 lg. onion chopped 3 cloves garlic pressed 1TBSP. olive oil cilantro a few leaves chopped cumin to taste salt and pepper added last to taste Rinse and soak beans over night. In olive oil lightly brown onion, garlic. Drain beans add to slower cooker along with onion, garlic, cilantro and cumin. Add water to cover beans and cook on low for 5-7 hours or until done. Add salt and pepper to taste.

One of my favorite go-to recipes is Twice Baked Potato Casserole. I do not use an actual recipe, so bare with me ;)
Bake a 5 lb bag of potatoes (or peel, die and cook like you are making mashed potatoes). Once soft, peel (if you baked them), add a stick of butter, salt and pepper to taste, a cup or two of shredded cheddar cheese, 2 8 oz boxes of cream cheese, half cup of milk, and about a cup of sour cream. Mix really well. I also add some garlic salt and diced chives. Bake at 375 for about 30-45 minutes. Meantime, shred another cup or two of cheddar cheese, cook and crumble a pound of bacon, and dice more chives. After the timer goes off, sprinkle the cheese on top, then the crumbled bacon, and then the chives. Bake another 5 minutes or until the cheese is melted. Yum!

Okay... Here are two family favorites - dessert recipes that my mother-in-law used to make all the time!
PRETZEL DESSERT
Ingredients:
2 c. coarsely crushed unsalted pretzels 3/4 c. melted butter or margarine 3 tsp. sugar 1 oz. cream cheese, softened 1 c. sugar 1 large container of Cool Whip 1 lg. box strawberry Jello 2 c. boiling water 2 10 oz. packages frozen strawberries, including juice
Directions:
- Mix pretzels, butter and 3 tsp. sugar. Press into a 9 x 13 pan. Bake at 400 degrees for a few minutes. Do not overbake. Cool. - Beat 1 c. sugar into cream cheese. Stir in Cool Whip. Spread on cooled pretzel mixture. - Mix together the Jello, water and strawberries with juice. Let set 10 minutes. Pour over cheese mixture and refrigerate until set.
BANANA SPLIT CAKE
Ingredients:
2 pkgs. graham crackers, crushed, (or 3 cups crumbs) 1 1/2 sticks melted margarine (or butter) 2 c. powdered sugar 2 sticks margarine (or butter), softened 2 eggs 1 1/2 tsp. vanilla 1 large can crushed pineapple 5 - 6 bananas, sliced 1 large container of Cool Whip 1 cup chopped nuts (or more – to taste) 1 jar maraschino cherries (or more – to taste) Chocolate sauce or syrup
Directions:
- Pour melted 1 ½ sticks margarine (or butter) over crumbs. Press into a 13 x 9 pan. Place in refrigerator. - Beat powdered sugar, 2 sticks softened margarine (or butter), 2 eggs and 1 ½ tsp. vanilla for 20 minutes or longer until very smooth. Pour over crust. - Drain the crushed pineapple, saving the juice. Spread the drained pineapple over the filling. - Soak the banana slices in pineapple juice for 15 minutes. Drain. Place the bananas over the pineapple. - Spread the Cool Whip over the pineapple. - Sprinkle with chopped nuts and maraschino cherries. Refrigerate. - Drizzle with chocolate sauce or syrup before serving.

Forgive me, cause I am not a measuring type of gal. Sesame Noodles: Box of linguine, cooked al dente. Add: About 1/4 cup olive oil, 1/4 cup sesame oil, a tablespoon or 2 of honey or sugar, a tablespoon or 2 of soy sauce (I use Bragg's aminos), and a tablespoon or 2 of a nut butter. Toss with about 5-7 chopped scallions, and a clove of chopped garlic (or 2 if you are making for a garlic lovin' crowd) Serve warm or chilled. Love this stuff!

I'm going to follow nubidane's lead and give you something with no real measurements since that's how I make it.
These disappeared pretty quickly at little get together Saturday:
Beef skewers with Rosemary Bleu Cheese Dip
Take whatever cut of beef you prefer and cook it to whatever doneness you like. We did rib eye with half the servings done medium rare and half done medium. Cut into generous bite-size pieces and thread one per skewer.
The dip is best if made ahead of time so the flavors can blend. The original recipe was for half mayo and half sour cream, but I have taken to using sour cream and Greek yogurt which is tangier, but some people don't like that as much as I do. Stir in a little salt and black pepper, Woostershistershestershire sauce (all our mispronunciations combined), finely chopped fresh rosemary leaves, and some bleu cheese. I add a few drops of Franks RedHot, but not much. Make this ahead of time and have it sit in the fridge for at least a few hours.
When possible, we like to serve the beef room temp as opposed to cold. The cool, creamy dip with that Rosemary and Bleu cheese "bite" are really yummy. I know not everyone likes such strong flavors, but for those of us who do, it is pretty darn good.

That sounds good Cindy, I've never paired blue cheese with rosemary. My DIL made a blue cheese dip last week--a recipe she's working on. I love melting blue cheese on top of a hamburger so this must taste somewhat similar. Yum. I vote for yogurt over mayo also!

Whenever we're asked to bring the beverages, we bring ingredients for my fruit punch, and pray for a big bowl! LOL!
2 cans frozen berry juice 1 box sherbert < any flavor - but I usually bring the rainbow! ;) > 1 can chunk pineapple in natural juice 1 bag frozen strawberries 2 cans mandarin orange slices big bottle or two of gingerale (use as much as you like) 1 jar maraschino cherries
Add everything into a big bowl, stirring gently. Voila - party in a bowl!

I enjoyed this thread so I thought I would revive it.
Remember the individual ground beef patties with vegetables wrapped in aluminum foil. To keep them warm for transporting to backyard potluck dinner put in throw away foil pan and wrap with heavy duty foil. No dirty dishes to take home.

I'm so glad you did, Sara! What a great idea!
In keeping with the no-measurement recipe tradition, here's another neat pot luck recipe I've made, enjoyed by kids and grown-ups alike:
Cheeseburger Casserole
In a large skillet, sautee one large onion.
Add ground beef; brown.
Drain off the fat, add salt & pepper to taste. (I have also tried this with a little homemade Ranch dressing mix and a couple of dashes of Worcestershire - yum! I would add whatever you normally add to your meat when making hamburgers at this point. You're basically making a crumbled hamburger for a casserole, so why not?!)
Spread mixture into a large baking dish.
On top of the ground beef add:
- chopped dill pickles
- chopped fresh tomatoes
- ketchup, mustard and relish to taste
(Note: At this point, you can pretty much add whatever toppings you like on your regular hamburgers - for example, we like to add sauteed mushrooms and sweet hot pickled peppers on occasion, and my husband likes it with a little mayo.)
Cover the entire mixture with slices of cheese so that you cannot see any gaps (We use sharp cheddar slices or pepper jack cheese, but American or any similar cheese should be great, too.).
In a separate bowl, mix together shredded potatoes with just enough flour to make them kind of flakey and "paste-y."
Add salt & pepper, along with about 1/2 tsp. baking soda and 1/4 tsp. baking powder.
Mix two eggs into the potato mixture.
Spread mixture on top of casserole.
Bake at 350 degrees until the potatoes are nice and crispy-brown.
The first time I made this, the guys went crazy. I had enough for a small army, figuring we'd have leftovers in the freezer for another day. NOPE! They devoured it by morning! LOL! It's also a great meal to have with a bunch of hungry teens - my son's buddies REQUEST it!)

Here's another favorite that's often requested: my Pizza Pasta. I've shared it before in other posts, but figure I'd add it here, too.
In a 13 x 9 baking dish, add a layer of spaghetti sauce
Add a box of your favorite pasta (I like rotini or penne)
Cover the pasta with 1/2 cup of water (to help cook the pasta and avoid having it become gummy) and plenty more sauce - you don't even want to SEE the pasta under the sauce.
Sprinkle some garlic and Italian seasoning on top, as well as a pinch of sugar... you can even add a light sprinkle of red crushed pepper, if you like!
Optional: At this point add some fresh, frozen or dehydrated chopped spinach or kale on top of the sauce. We LOVE it with spinach. It adds an incredible flavor. Even kids who won’t each spinach or kale have eaten it this way and love it!
The next layer is a thick topping of mozzarella and toppings of your choice. I like to add a thick layer of pepperoni so that you can't even see the cheese, or pepperoni with onions, peppers and mushrooms.
Cover with foil and bake at 350 degrees for one hour and fifteen minutes (to make sure the pasta is cooked). You can remove the foil in the last 10 minutes if you'd like the toppings to crisp up a bit.
We love making this when we have a big crowd show up unexpectedly, and it's a number one request of our son's friends when they stay over. It's delicious!
I've actually increased or doubled the recipe and made it in a roasting pan when necessary, too, so if a 9 x 13 isn't enough, just adjust the pan size and quantity of ingredients accordingly.
A nice salad and garlic bread on the side makes the perfect accompaniment, if you like; but believe me, it's excellent served all by itself! :)

Oh! And here's my Mom's recipe for Seven-Layer Salad. We don't have a holiday or family celebration without it!
In a large bowl, layer:
1 head lettuce, torn into bite sized pieces
1 head broccoli, chopped
1 head cauliflower, chopped,
1 red onion, thinly sliced
1 lb. bacon, fried crisp, drained well, cooled and finely crumbled
8 oz. shredded cheddar cheese
1 package frozen peas (regular or baby peas)
In a separate bowl mix together:
1 cup. Mayonnaise
1 T. sugar
1/8 tsp. coarse pepper (Mom uses white pepper - I use regular pepper)
Spread the mayonnaise mixture evenly on top, making sure you spread to the edges of the bowl, “sealing” the salad. If you need to make a little extra dressing to accomplish this, by all means, do! :)
Cover salad with plastic wrap and refrigerate over night. Mix everything together very well before serving. Enjoy!

Yumm! I love the recipes shared here. Nothing better than tried and true family favorites from our Farmgirl Kitchens.
Sara, I do remember those aluminum foil dinners!!. We used to make them at Girl Scout and place them in the coals of our campfire. They always tasted fantastic and were so easy for us to make. Thanks for bringing the idea back up. My mom also used to make them with a chicken leg in the oven when she was going to be busy with her scout troop meetings in the afternoon. That way dinner was done when she got home .

Nini, both of your dishes sound yummy. Will give them a try. Like the potato flour mixture for a topping ~ that should work on a lot of casseroles.
Winnie, never thought about using chicken. I don't do chicken legs, but a 1/2 breast should work.

My go to comfort dessert (it is RICH!!!) Brownie Trifle
1. Make a 13x9 pan of your favorite brownie mix. Let cool.
2. Mix 3 small boxes of chocolate instant pudding with 4 cups of milk (will be thick!)
3. Divide brownies into thirds, pudding mixture into thirds, a bag of Heath pieces into thirds, and a small container of cool whip into thirds.
4. In a large trifle dish or glass bowl, layer 1/3 of brownies, crumbled up. Then put one third of pudding mixture, then 1/3 of cool whip, and then one third of heath pieces. Repeat two more times. Put in fridge for at least 4-6 hours, to let it set.

Shannon, one word ~ delicious.
Reminds me of a dessert I had at a Herb Society meeting. Didn't have a name. Measurements depend on size of dish.
In a casserole dish layer Klondike Bars. Cover the bars with prepared instant chocolate pudding Top with whipping cream or Cool Whip Sprinkle with chocolate shavings
