Hey all,
Just wanted to shout out for rhubarb! It is growing super well in my garden and I love it. It is one of the first thing I cook with from the garden and this spring in Wisconsin has been a loooooong time coming. Hurrah!

Let's salute for rhubarb! Wish I had a patch. I plan to put one in this year. I may have to mud it in with all the rain. So far, I rely on friends and farmers markets.

Mary, I love Rhubarb! I have a recipe for a rhubarb cobbler that is so delicious, Down here in Florida, we see it in early Spring but it is expensive and you need a lot since it cooks down. Let us know what you like to make with it!

Here is a recipe for Pink Rhubarb Punch. It is one of my favourite drinks! I think we clipped it out of a Country Woman magazine many years ago...

8 cups chopped fresh rhubarb
8 cups water
2 -1/2 cups sugar
2 Tablespoons strawberry gelatin
2 cups boiling water
2 cups pineapple juice
1/4 cup lemon juice
6 cups ginger ale, chilled

In a large saucepan, bring rhubarb and water to a boil. Reduce heat; simmer for 10 minutes. Drain, reserving liquid (save rhubarb for another use). In a large bowl, combine sugar, gelatin and boiling water until dissolved. Add pineapple and lemon juices; mix well. Stir in rhubarb liquid; refrigerate. Just before serving, pour into a bowl or pitcher and add ginger ale. Makes about 5 quarts.

We usually use the left over rhubarb for Strawberry Rhubarb pie. :)

Rhubarb is a staple of Minnesotans. Love it in any way. That punch is delicious and pretty, but it doesn't last very long. lol

I love rhubarb! My mom raised it and had lots of ways to serve it. I even liked eating the really ripe stalks raw! (pucker up!)

I'm a rhubarb fan too! Unfortunately I live in a partial to full shade area, so I can't grow it I'm so looking forward to the start up of the farmer's markets here so I can buy some. Enjoy your bountiful crops of it!

I love rhubarb too, and have two plants that I started about three years ago. Joanna, I've got the very same punch recipe and it is delicious. We had some on Mother's Day.

Last year I found a recipe I really like for rhubarb ice tea. Cut about 8 stalks of rhubarb into pieces 3 inches or so long. Put in a pot with 8 cups of water, bring to a boil and simmer one hour. Strain (I strained it in a colander lined with several layers of cheesecloth). Add sweetener while it's hot. The recipe called for 1/3 cup sugar, or to taste. We used stevia. Stir to disolve and allow to cool. Serve over ice with mint springs. Refreshing and yummy, can't wait to make it again!

Guess what? I just tried rhubarb - anything - for the first time. I was at a friend's house and she had just harvested it. We tried it raw, dipping it in sugar. I liked it! I can see cooking it in pies, etc. Yum!!!
