So, I love to cook. I will cook/bake anything. My family isn't finicky, either. However, in an attempt to replicate a quinoa salad, I failed. "Epic Fail" as my twelve year old puts it. It was gross. No one ate it. We ate cereal!
Anyway, now I have a big bag of organic quinoa and need to have some way to fix it. Help a farmgirl sister out! Got any good recipes? Please share them with me.  Farmgirl Hugs, Nicole

Is there a particular kind of quinoa you're using? How did you prepare it?

Hi MaryJane,
I had ordered a quinoa salad at a restaurant and when I saw organic quinoa at the store, I thought it would be fun to try to replicate. The package says it is like taboule, which we always loved. I don't know where I went wrong, but it was not tasty! I followed the package directions for the quinoa, drained it and put in a bowl to chill. I added grilled chicken (which was good), sauteed kale and onion (like at the restaurant) cucumber, tomato, olives, olive oil, mint, parsley, garlic, salt, olive oil and lemon. I am thinking maybe the cooked veggies were too oily, I am not sure. It was just gross.
So now I have a bag of plain, uncooked, organic quinoa with no idea of what to do with it. Have any good ideas?

Nicole I'm with you. I have had some mixed experiences with quinoa (and one involved kale) I remember hubby said "I've had worse", which is code for "this is bad". Hopefully MaryJane can shed some light. I think it has to be slightly undercooked?? or else it is a slimy mess.

I am so glad you said I am not the only one with a disastrous quinoa! I wish I had taken photos of their faces...my family was ready to check my temperature and see if I was okay, lol, it was that bad. My hubby doesn't like to eat out because he says he's always disappointed because my cooking is always better. I have to say the taste was slimy and bitter, though I followed the cooking instructions on the bag to a "T". Hmmmmm...

Is there an expiration date on the package? I love quinoa and put it in my salads quite regularly. The package I have on hand right now is from Alter Eco.

I love quinoa, too, but my family isn't a fan. I would certainly check the date. As for ways to prepare it, I make a veggie loaded pilaf, one third of the grains as quinoa, one third rice, one third barley. Makes a great meatless meal!

The date on the package is fine, just checked. It was brand new. I did rinse it but had a hard time with that, as even my smallest mesh colander had holes too big. I ended up using a coffee filter. Maybe it wasn't rinsed enough (and sure was messy in doing so). I will try rinsing it more next time. Very interesting article, MaryJane.
Do you have a favorite recipe or salad I could try? If I try to make it the way I did before the family will surely protest. ;)
The pilaf sounds good, too, Alicia. What spices do you jazz it up with?

The kind I buy I don't even rinse. Once it comes to a boil, I skim the little bit of foam off with a spoon, turn the heat off and put it in a padded cozy. Perfectly done that way. I'll send you some of mine to try, that way we'll know if it's the brand you have that isn't agreeing with you and your family.

Here is my recipe! It is my very own! :D
Veggie Pilaf
1 cup each prepared rice (I like Jasmine), barley (pearl, not quick cook), and quinoa
1/3 c EVOO 3 diced carrots 4 diced stalks of celery 1 medium sweet potato (this is really pretty if you can use a purple on!) 3 garlic cloves 1 lg bunch of well chopped kale 6 lg baby bella mushrooms, sliced thin or diced 1 small yellow onion S&P to taste
- Saute onion and garlic in half of the EVOO for 2 minutes, add celery, carrots, and sweet potato; soften a bit. -Add mushrooms and kale, sauté until kale wilts. Add more EVOO if needed. -Add grains, rest of EVOO and season.
Also good with a small diced zucchini. :) Enjoy!!!

While we were on spring vacation in Alexandria/Washington DC area, we had breakfast at a organic restaurant that served a delicious quinoa porridge. I checked on the internet and found this recipe from "All Recipes" website. I have had great success with this recipe and with the recipes I've gotten in the past from this website. I really hope anyone who tries it will have delicious results too!

QUINOA PORRIDGE
INGREDIENTS: 1/2 cup quinoa 1/4 teaspoon ground cinnamon 1 1/2 cups almond milk 1/2 cup water 2 tablespoons brown sugar 1 teaspoon vanilla extract (optional ) 1 pinch salt
DIRECTIONS: 1. Heat a saucepan over medium heat and measure in the quinoa. Season with cinnamon and cook until toasted, stirring frequently, about 3 minutes. Pour in the almond milk, water and vanilla and stir in the brown sugar and salt. Bring to a boil, then cook over low heat until the porridge is thick and grains are tender, about 25 minutes. Add more water if needed if the liquid has dried up before it finishes cooking. Stir occasionally, especially at the end, to prevent burning. |

Dawn, I have some left-over coconut milk in my fridge from some recipe testing so I'm going to try your recipe and use it up. Looks delish.

MaryJane: Thank you! You were right (of course)! I made the quinoa that you sent. I followed the directions to a "T", and made the recipe you sent with the fresh peas. I don't have a "quinoa cozy" yet, but used a tea cozy that fit my pan. It was perfect! We gobbled it up and quinoa is now officially back on the "make it again menu".
