Earlier this month I visited our local state park and attended a dutch oven cooking event. It inspired me to get out my dutch oven that I bought but never used.

I got it seasoned, (Thanks Mary Jane). I decided to make chicken enchiladas. Lighting the briquettes was the scary part but it turned out easy. Kinda cool cooking on my back porch. The meal turned out pretty good.

That looks wonderful Nancy. I have been cooking in the dutch oven when we are cooking sap. Got plenty of coals to use, so it goes great.
Yesterday I made a breakfast casserole.

Nancy, that looks delicious! I've always wanted to try that out camping but never have. I'm going to round up all my men and give it a try. Guess it looks like we may have more camping trips in our future, that would sure make my heart happy.

Nancy, that looks so yummy! We love to cook in our Dutch oven when we go camping. My dad makes amazing meals in his Dutch oven.
