For the intermediate level of the bakeover makeover badge I made 2 new recipes:


For the main course:
Using a 12" cast iron skillet
2TBS butter
1 pound hamburger
1/2 large onion, chopped
12 oz bag of frozen sweet corn
salt and pepper to taste
1/2 cup hot pepper cheese
candied jalapeno peppers

Preheat oven to 400 degrees F. Melt butter, saute onion. Add hamburger. When the hamburger is almost done add the corn. Cook until burger is no longer pink and corn is warm. Sprinkle with cheese and add a layer of jalapenos across the top.

For the bakeover:
3/4 cup milk
1/2 cup cottage cheese
4 eggs
1 cup bakeover mix

Mix well and pour over beef mixture. Lift gently with a fork to allow mixture to spread throughout. Bake for 40 minutes or until set and golden brown. Note: Next time I'll also be adding some black olives and topping with sour cream.


For dessert:


Using 8" cast iron skillet
Preheat oven to 400 degrees F.
butter skillet
Add 2 1/2 cups blueberries

For bakeover:
1/2 cup milk
2 eggs
3/4 tsp vanilla
6 TBS bakover mix

Mix all well and pour over blueberries. Using a fork lift gently to allow mixture to penetrate blueberries. Bake for 30 minutes or until set and golden in color. Note: I used frozen blueberries that weren't all the way thawed and the cook time was a bit longer.

Heather, your blueberry dessert looks amazing! My kids would love that, I am adding that to my list! Your dinner looks yummy too. Great work.

They were both really good! The blueberries were fantastic with some ice cream :)
