Canned up 6 pints of split pea soup yesterday. 1 failed seal. got some soup leftover, so might do another batch for my ma.

I've never had split pea soup. I love peas so maybe I'll have to try it LOL!
I used the lat bit of apples to make some juice. 3 quarts and a pint.

Thanks Sara. It is nice to have a heat and eat meal. Heather split pea is not quite the same as garden peas. It does make a good soup, I prefer yellow ones. Green ones just don't look appealing to me.

I steam juiced some apples yesterday. I got three quarts of juice. I will do another batch today. We don't have alot of apples this year, and I did not need alot of juice, so did not get out the press. Hoping my hatch chili peppers grow fast. This is my first year trying them. I want to can little jars of them. I do have four in the freezer that I roasted on the grill. I have maybe a dozen growing on the plants now. I did not order the seed till June, so they got planted late. That will be the last vegetable to can on my farm. I plan on canning some meats this fall, for my ma and us.

Michelle, Hatch peppers are all the rage down here and they are good. I hope to get back to my canning by next week if the Lord's willing and the creek don't rise.

Not much canning this year, the garden has been icky. Did 8 qts green beans, 5 pints roasted marinara, and a couple of quarts of tomato puree. Still need to get more tomato products put up. BTQ Sara, I made the black pepper rosemary apples and they are quite tasty! I haven't canned them yet, still in the fridge. Michele, I think you get the canner of the year award for sure! |

Lisa hope you had plenty left over from last years canning to make up for a bad year. Sara that saying is a good one. Have not heard that for a long time now. Got the final three jars of apple juice done yesterday. Made a pan of Danish Apple Bars too. Yum.

I canned 3 more pints of roasted tomatoes. My plant is still loaded with green tomatoes. I am really hoping they all ripen before the first frost hits.

Krista you can pick any tomatoes before the frost, and ripen them in the house. Some will and some might not, but it is worth trying.

Thinking about canning chili next week. Have everything on hand but the 5 lb chuck roast which I will order with next week's groceries. Recipe says it makes 6 pints - Bet I can make it 7 pints.

That's a great idea, Sara! I canned some chili in the past but it was made with hamburger and I didn't much care for canned burger. I bet the roast would be much better.

Heather my plans have changed. At $9 a lb for chuck roast I couldn't see spending $45 for the 5 lbs the recipe calls for. I found a chili recipe in my USDA Complete Guide to Home Canning that calls for 3 lbs ground beef and 3 cups dried pinto or kidney beans. $20 for ground beef I can afford. I bought 93/7 ground beef to make the chili healthier and used 2 Tbsp of EVOO to brown the ground beef. I didn't have enough pinto beans so I used King City Pink beans that are in the pinto bean family. I prepped yesterday; made the chili this morning and will can tomorrow. As for canned beef so for I have liked the recipes that had ground beef in them.

WOW! I'm blessed with a freezer full of home grown beef. You don't notice the cost so much when you feed it and then pay for the butchering. We eat a lot of burger so I'm guessing that's why it tasted different to me. The texture was different - probably from pressure canning. I like canned beef just fine, but I usually make it from left over chuck roasts, round stakes or stew meat. I bet I wouldn't eat nearly as much beef if I had to buy it at the store instead of paying for feed!

Canned 7 pints of chili w beans today and one didn't seal so I will freeze it. The recipe made 9 pints so after cooking the leftover chili for over an hour to finish cooking the beans. I will freeze the chili in single serving containers when it cools in the fridge. Had the chili for lunch and it was good. Happy I made and canned it.

Heather, I feel the same way. But really when you think about it you are paying one lump sum for the cow and getting all different kinds of meat. So what you pay per pound for ground beef is the same per pound for roasts. That is why I have always enjoyed having a whole beef in our freezer as well. Not only does it taste better but the price is too.
Yesterday I canned 3 pints of pickled banana peppers. This year I added some pickle crisp to the jars to hopefully keep some of the crunch. Last year's pickled banana peppers tasted good but were soft. We are still eating them, but I prefer the crunch.

That's a great idea Sara - to freeze the unsealed jar. I usually just eat whatever doesn't seal. Not sure why I never thought to freeze it. Must be a blonde moment LOL!
I hope your peppers are crunchy, Krista. I had some dill pickles that were soft this year. My niece loves dill pickles and when she came for a visit I opened a jar just for her. I had to laugh because she didn't like the texture but she loved the taste so she just sucked on them LOL!
