Last night I made a Red lentil soup - a recipe from Lisa Oz (Dr. Oz's spouse). Very healthy and hearty. Yesterday was so cold and windy, a perfect soup day! It is one of those recipes that is easy and quick to make and oh so nutritious! Here is the link to the recipe:

We are continuing our study on Indonesia for the next two weeks.. so tonight is Beef Rendang over rice... and hubby has been asking for Brussels Sprouts, so I'll probably make those with it... Not exactly Indonesian, but we need a veggie anyways ;)

Shannon, the way you weave your dinners in with class studies is neat. What's in Beef Rendang?

My sister and I are shopping today so we may grab a hamburger at Braums. If we do I will buy a sack of burgers - eat one and freeze the rest.

Sara - rather than trying to explain everything, as I would surely miss something, here is the recipe we use - http://www.manilaspoon.com/2014/03/beef-rendang.html I think I drive my hubby nuts with my meal planning! Tuesday is our international dinner, Wednesday goes with Five in a Row, Thursday varies - often it seems to be history related, and then Friday the first letter correlates with the letter my 5 yo is studying. We don't have the same thing twice too often in a year, unless it is a family favorite, as the other nights I prefer to try (more) new recipes! I hope you and your sister enjoy your shopping trip!

Tonight was spaghetti and meatballs, tossed salad and steamed brussel sprouts. Everything all of you have made sounds really good. My Pastor's wife was happy to find out that I never make up menus ahead of time. Most days it's what ever I decide on at the last minute. Lol, at least we don't go hungry.

Spaghetti sounds good. My family likes roasted Brussels sprouts with a sweet, cayenne, vinegar sticky sauce tossed with them.

Brenda me too, I only plan ahead most days if I am having company! I keep ingredients in the pantry for spaghetti and chili and stock the freezer with Veggies from the farmer's market during the summer.I just throw it together some days! LOL! My hubby is a vegetarian so it's pretty easy, I cook with Morningstar farm soy crumbles instead of ground beef, that's really easy! I do Tacos, Chili, and Spag. Lasagna, Tatar Tot casserole. He loves just a 3 veggie plate and salad!
Last night we had salad, stir fried asparagus, mashed potatoes and green peas and rolls.
Shannon, I love as well, how you prepare your dinners along with the kids studies!!

Thank you ladies! Yesterday we finished up the Revolutionary War, so we had a Revolutionary War Movie night, complete with a themed dinner, of course :) We love the recipes from Walt Disney World (if I went back it would totally be for the food and characters), so I decided to do a dinner from Liberty Tree Tavern in Magic Kingdom :) It was Declaration Salad, New England Pot Roast with Veggies over Mashed Potatoes, Rolls, and Apple Crisp Cake. Yummy!!! Tonight our focus is on my 5 yo's letter for the week - C, so we are having Coconut Chicken Curry. We LOVE Thai food, so I am really excited to try this recipe tonight!

Sara, How do you make your kale and potato soup? I made it a few days ago and my hubby wasn't to fond of it. He ate it though.

Left-over lasagna for tonight, tossed salad, and whatever vegetables I decide to fix. Love left-overs!

I cook the russet potatoes and kale in chicken broth with black pepper, 1/8 tsp of red pepper flakes and 1/4-1/2 tsp of ground cumin. When potatoes and kale are tender I add milk and simmer for a couple of minutes. I mash some of the potatoes for a thicker broth and leave the rest in hunks. I also like to slice up cooked link sausage in the soup.

I am trying out a new crock pot beef stew recipe I found in my current issue of Cappers Farmer magazine. It sure seemed easy to put together and I hope it tastes good because it is always great to have a solid crock pot recipe to use when time is limited.

I just made Veggie Chili with a jar of canned tomatoes from my little farm stand down the road. It's closed now until April, so I stocked up on Jars of tomatoes and jams for the winter until they open again the first of April.

Pot roast and veggie chili - it all sounds good. I had a whole bacon, tomato, and avocado sandwich. I stressed the whole sandwich because I'm trying to loose weight and during the week all my sandwiches are fold overs with one piece of bread. On the weekends I allow myself two slices of bread. BTW only one sandwich a day no matter the day of the week.

Your sandwich is right up my alley Sara. I also like a rustic bread, spread with a bit of cream cheese, avocado slices, lemon pepper, sunflower seeds and...oh yes I toast the bread first.

OOOOOOOOO yes!! Sandwich! I love the Arnolds Grain breads. Flax Seed and Sesame is my favorite but it is sold out a lot at Kroger and Wal-mart! My Treat Sandwich is Peanut Butter, Raisins and honey!!
