Sara perhaps if you share the pumpkin scone recipe I can use the rest of the pumpkin that is in a jar in my fridge.(The left overs from The turtle pie.) Yum! |

Pumpkin Scones with Cinnamon Glaze - 2011 Clark County Fair
Scones:
1 cup all-purpose flour 1cup cake flour 1 ½ tsp baking powder ½ tsp salt ½ tsp ground cinnamon ½ tsp ground nutmeg ¼ tsp ground allspice ¼ tsp ground ginger 6 Tbsp unsalted butter 1/3 cup pumpkin puree 1/3 cup heavy cream 6 Tbsp brown sugar 1 tsp vanilla
Glaze:
1 cup powdered sugar 2 Tbsp milk ½ tsp ground cinnamon
Procedure:
Preheat oven to 425F. Line a baking sheet with parchment paper or Silpat. Cut the butter into small pieces and keep refrigerated until ready to use. In a medium bowl, sift together flour, baking powder, salt, and spices. Place bowl in freezer.
In a separate bowl, combine pumpkin, heavy cream, brown sugar, and vanilla. Mix well to combine. Refrigerate to keep cold.
Using a pastry blender, cut the butter into the flour mixture until it resembles coarse crumbs. Add cold pumpkin mixture and stir until dough is just moistened. The dough will be very crumbly. (lightly flour surface) Turn the mixture out onto the counter and round into ball. It should stick together fairly well. Knead it just a couple of times until it starts to come together. Don’t over knead – the dough will become too sticky.
Shape the dough into a circle ¾ to 1” thick. Cut into 8 wedges. Arrange on prepared baking sheet. Bake for about 15 minutes, or until light brown on the bottom.
Sugar Cinnamon Glaze:
Mix together powdered sugar, milk, and cinnamon. Add additional sugar or milk as needed to achieve the desired consistency. Brush or drizzle onto warm scones.

Just for fun here's what the scone cookbook says about how pumpkin pie came to be.

Sara, thank you so much for the pumpkin scones recipe. I think that First pumpkin pie was probably delicious. People were so resourceful back then. I listened and watched my grandmother and my mother cook, and tell stories of how they survived on much of nothing. I feel confident that my husband, our son and I could live on beans and cornbread...It would be so hard for the rest of our bunch. But as my mother said, 'if you go to bed hungry, you will soon learn to eat what your family is eating.' Oh yes I will post here the results of my efforts. Thanks. |

The baked pumpkin properly could use some heavy cream or butter - maybe an egg or two. Don't know where I am going to find dying embers around my place to give it a try. lol |

Marilyn, my grandma was like that...she could feed her whole large family plus whoever they brought home with them on next to nothing...and it was filling and delicious! How many times have I stared into my pantry wondering what to pull together? Let us know how the scones turn out! I can't wait until I get home so I can try both recipes! |

I used two cups of Einkorn flour and only 1/8cup of cream.
My gut is having a severe issue with regular flour right now. |

Marilyn that looks wonderful! Thanks for sharing the picture. I am still trying to get my turtle pie and pumpkin gone. Plus my daughter left a lemon meringue for me. Shame on her but she knows I love lemon. |

Here is another scones recipe I got from Grace (AKA katmom) that is WONDERFUL! It is very simple and I've made them twice since she gave me the recipe.
2 C Bisquick mix (or any tyoe of bakinng mix) [I used Piioneer Baking Mix) 2/3 C milk (you can mix 1/3 C milk and 1/3 C water) but Grace said she likes the milk better and I used all milk 1/4 C sugar 1/2 C chocolatechips/raisins/nuts/poppy seed (optional)
Gently mix the milk into the Bisquick & sugar Then add the chocolate chips/raisins/nuts/poppy seed and again gently mix
let the sticky dough 'rest' for 5 minutes then with a spoon drop onto ungreased baking sheet
bake 12-15 minutes at 425 degrees
They should be fluffy if you don't over mix the sticky dough.
Your dough should be sticky; if not, just add a tsp more of Bisquick mix.

Does anyone have a good recipe for a breakfast casserole? My son and his family will come here Christmas Eve morning for our Christmas celebration. My DIL has to be at work at Noon and she has over an hour drive to get there, so I'm thinking breakfast would be best. They are going to Oklahoma for all of Christmas Day because that is the only day her mother can get off . |

Linda, this is the recipe i like to use.
5 INGREDIENT SAUSAGE HASH BROWN CASSEROLE
2 lb breakfast sausage 1 (30-32oz) bag frozen shredded hash browns 2 cups shredded cheddar cheese 8 eggs 2 cups milk 1/2 tsp pepper
INSTRUCTIONS
Preheat oven to 350 degrees In a large skillet, cook sausage until no longer pink. Drain fat. Add hash browns to skillet and cook until lightly brown. Place hash browns in bottom of lightly greased 9×13-inch pan. Top with sausage and cheese. Whisk together eggs, salt, pepper and milk. Pour over hash brown mixture. **Cover and refrigerate at this point if baking later.** Bake for 35-40 minutes. |

Linda that is a great idea. We had a breakfast/brunch for my birthday...first time, but we all enjoyed it so much. Then we had time to visit nap, go to town, etc. |

Question: Can it be made without the sausage, too? My son and one grandson are vegetarians. (The grandson is 12 and has just recently said he wants to be vegetarian. I don't know how long it will last.) |

Marilyn I don't know as I've never made it another way but I believe you could use spinach in its place. I have used it in place of burger in some of my other recipes. |
