Ohh, that southern peach bread is looking delicious and not too hard to make. I have some ripe peaches right now that could work.

One of our peach trees is producing some peaches. Ed brought in several yesterday and today. I am going to make this bread and use Keto-friendly flour and sugar.

If anyone must use gluten free flour...gf jules is the way to go. When Julie first began baking for Baylee she Mixed her own, then bought some at Walmart. I could not stand the grittiness of the coconut flour. Uck! So I kept searching. Now we only use her flour. You can order a bag of flour from amazon or go directly to her website. She also has mixes, I've tried the sandwich bread, the Cornbread and some others...everything she does is fabulous!

I tried the Jules flour when I was gluten free but wasn't too crazy about it and it was too pricey. I make a blend that I like much better.

5 cups brown rice flour
3 cups sorghum flour (also called jowar flour)
2 #8532; cup cornstarch
1 cup potato starch
#8531; cup potato flour
4 teaspoons xanthin gum

Do you use that flour for all baking? Is it Keto friendly? If so, I may have to make some. What do you store it in? a large Tupperware container?

I used it for all baking when I was gluten free for my IBS diet. It worked really well. I'm not on a gluten free diet now; I had a stroke several years ago and after that the IBS went away. Really weird -- I asked the doctor about it and she said the brain is a strange thing. Anyway, I'm not gluten free at the moment. I'm trying to adjust to a diabetic diet now. I stored it in a big Tupperware container. Unfortunately it is not keto.

I made the peach bread yesterday using my CarbQuick instead of flour and it is delicious. Thank you Karen for the recipe link.

And today we picked quite a few peaches off the tree, but the tree is still very full. I think we need to pick most of the rest tomorrow or the birds will get them before we do.

I think it was Monk Fruit and organic light brown sugar. I had put it in a canister and not sure. I have 2 bags of stevia sweetener in the cupboard.

The bread is very moist and it is good.

The peaches are sweet this year; the last 2 years we didn't get but a couple and they weren't good.

Just finished picking another 11 1/2 lbs of blueberries so we have done about 19 1/2 altogethr. As you can see by the photo there will be more ready in a few days or so. My freezer is filling up!

I snitched a picture of my daughter's smoothie recipe and thought I'd share. Two things, I halve the recipe when making for just me and I use almond milk in place of regular milk. Oh, and I leave out the honey when I use all berries. If I use bananas I add it. Just my taste is all.

Smoothie Recipe
1/2 c. milk
1/4 c. yogurt
1 c. fresh fruit
2 c. frozen fruit
1-2tbsp. honey
Mix in blender.
Enjoy!

(I use my handy little immersion blender)

I don't have a blender anymore but smoothies are great and healthy. It is also fun to just make them up with various ingredients because there aren't any real rules to follow. Just combine what you like.

I am enjoying them for breakfast these days. A nice treat in the hot summertime. I didn't use the frozen fruit this morning I just replaced it with fresh. So good and good for you!

My favorite smoothies were made with a banana, fresh peach or two, a cup of yogurt, a splash of pineapple juice, spoonful of almond butter, lots of ice, and let the blender whirl into a great breakfast on the go. It was my favorite for taking to work.

Still working on picking blueberries. Will probably make this weekend our last trip. Not sure if they will still have thwm after that but blackberries are coming on and I am hoping to get some of those in the freezer!

This looked liked a yummy recipe to try.

I've been taking online baking classes through Williams Sonoma! They are live zoom classes each Monday. I pick and choose what I want to take. So far I've learned to make chocolate chip cinnamon rolls! So rich and yummy! Tomorrow night it's a class on Raspberry Jam Coffeecake!
I've also learned to make my own pasta! It's very therapeutic, like making bread!
